APPLE-CHEDDAR PANCAKES WITH BACON
After tasting a scrumptious grilled apple and cheese sandwich, I decided to try the same flavors with pancakes. The idea of adding bacon came from my bacon-fanatic sister. -Kim Korver, Orange City, Iowa

- In a large bowl, whisk eggs and milk until blended. Add biscuit mix and bacon; stir just until moistened. Fold in apples and cheese., Lightly grease a griddle; heat over medium heat. Drop batter by 1/4 cupfuls onto griddle, spreading batter with the back of a spoon as necessary. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. If desired, serve with butter and syrup.

- Heat oven to 450°F. Spray 13x9-inch baking dish with cooking spray. In medium bowl, beat flour, milk, salt and eggs with wire whisk until smooth; pour into baking dish. Bake 15 to 20 minutes or until puffy and golden brown.
- Meanwhile, in 10-inch nonstick skillet, melt butter over medium-high heat. Cook apples and chives in butter, stirring frequently, until apples are tender. Stir in sugar.
- Spoon apple mixture onto pancake. Sprinkle with cheese. Bake about 1 minute longer or until cheese is melted.

BACON AND APPLE PANCAKES (PANNEKOEKEN)
Pancakes (pannekoeken) are a Dutch tradition. There are pancake houses all over the Netherlands. As a kid I loved to go to the pancake house. Typically they make the pancakes very large and serve them for any meal. The pancake is generally served with powdered sugar or heavy Dutch syrup (stroop), and the menu typically offers quite a variety including ham and pineapple, ham and cheese, apple and raisins, assorted fruit, mushrooms, or my favorite - bacon and apple. Steps:
- Mix flour, baking powder, salt and a little of the milk to a smooth paste. Slowly add the remaining milk, while whisking. Add the egg, beating the mixture well. For a lighter texture, leave to rest for a few hours or overnight.
- Melt the butter and oil in a large frying pan and wait until it sizzles. Pour in enough of the mixture to cover the entire surface of the pan (spread the mixture evenly by tilting the pan). Bake until bubbles appear on the surface and turn over. Pancakes should be pale golden on both sides. Set aside and keep warm.
- Fry bacon in the pan until crisp. Remove to a paper towel to drain. Now add the sliced apples to the bacon fat and caramelize. Drain on paper towels. Serve pancakes open-faced on the plate, top with apples and bacon and drizzle some syrup on top.
COTTAGE CHEESE APPLE PANCAKES
This recipe is from Moosewood Restaurant Cooks at Home. These pancakes are high in protein and very delicious. Keep the pancakes small, around 4 inches, because they are difficult to flip if they are any bigger.

Steps:
- Peel, core, and grate the apple into a mixing bowl.
- Thoroughly mix in the cottage cheese, eggs, cinnamon, nutmeg, maple syrup, and salt.
- Sprinkle in the flour and baking powder and stir well.
- Butter or oil a heavy griddle and place it on medium low heat.
- For each pancake, ladle 1/4 cup of the batter onto the skillet.
- When bubbles form on the tops and the bottoms are browned, flip the pancakes over and brown them on the other side.
- Serve topped with maple syrup or sour cream and fruit.

- In a large bowl, mix 1 ¼ cup of flour, 4 egg yolks, 3 grated apples, 1 cup of cottage cheese, 1 Tbsp honey, ¼ tsp cinnamon and a pinch of salt, stir until blended.
- In a separate, clean bowl, beat egg whites 1.5 minutes on high speed until foamy and soft peaks form. Fold the egg whites carefully into in the rest of the mix with a spatula.
- Add 2-3 Tbsp oil to a large nonstick skillet and preheat it to a med/high. Drop a tablespoon-full of the batter onto the hot oiled skillet and press it down slightly. Saute for 3-4 minutes per side until golden on each side.

- In a large bowl combine 2 cups farmers cheese, 4 eggs, 3/4 cup flour, 3 Tbsp sugar, 1/2 tsp salt and 1/2 tsp cinnamon. Use an electric hand mixer on medium speed and mix just until well blended.
