BAKED HAM AND APPLES

WHEN Mother wanted to serve ham, she went to the smokehouse, took one down from the rafters and sliced off as much as was needed. The rest was hung up again. Baked Ham and Apples image

Steps:

  • Place ham in an ungreased 13-in. x 9-in. baking dish. Rub with mustard and sprinkle with brown sugar. Core apples and cut into 3/4-in. slices; arrange in a single layer over ham. Dot with butter and sprinkle with pepper. , Cover and bake at 400° for 15 minutes. Reduce heat to 325°; bake for 45 minutes. Uncover and bake 15 minutes longer or until apples are tender.

BAKED HAM WITH BROWN SUGAR AND APPLE GLAZE

This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

Baked Ham With Brown Sugar and Apple Glaze image

Steps:

  • Set oven to 325 degrees.
  • Place the ham in a roasting pan and bake until a thermometer reads 150F (about 15 minutes per pound).
  • Cool the ham completely (you can cover and refrigerate the cooked ham up to 2 days ahead).
  • In a saucepan bring the apple cider and dried apples to a boil over medium heat.
  • Boil until the liquid is reduced to about 1-1/2 cups (this should take about 8-10 minutes).
  • In a small bowl, whisk together the brown sugar, cider vinegar and mustard until well blended.
  • Add to the cider mixture; simmer sauce until reduced to about 2-1/4 cups, stirring occasionally (this shoud take about 5-6 minutes) the sauce can be prepared a day in advance and refrigerated.
  • Set oven to 375 degrees.
  • Cut 1/2-inch slices from the bone, and place into a glass baking dish.
  • Spoon the sauce over the slices.
  • Bake in the oven until heated through and the sauce bubbles (about 25-30 minutes).
  • Transfer to a platter to serve.

And cooking a spiral cut ham in an air fryer produces a delectable, caramelized exterior. Some would say that the leftovers are the best part!

Air Fryer Brown Sugar Ham image

Steps:

  • Remove the ham from the refrigerator and allow it to come to room temperature, about 30 minutes.
  • Mix the sugar, vinegar, mustard, Worcestershire, cinnamon, chili powder and allspice in a small bowl. Cut two 20-inch sheets of heavy-duty foil, overlap them perpendicularly and place the ham in the middle skin-side up. Pour the sugar mixture over the ham, making sure the ham is fully covered. Cover the ham with the foil and seal it to keep the mixture from leaking.
  • Put the ham in a 6-quart air fryer and cook at 325 degrees F for 30 minutes (see Cook's Note); when you open the foil, the ham will be starting to brown and there will be plenty of juices in the foil. Baste the ham thoroughly with the juices. Continue to cook, uncovered, until the slices begin to come apart and the top is a deep brown, another 20 minutes. Baste the ham again with the juices. Continue to cook until the ham is dark and shiny on top but still pink and juicy in the center and an instant-read thermometer registers 140 degrees F, an additional 10 minutes.
  • Transfer the ham to a serving platter and pour the juices into a small saucepan. Let the ham rest for 10 minutes. Simmer the juices over medium-low heat until they thicken into a syrup, about 10 minutes. Pour the sauce over the ham and serve warm or at room temperature.

One 2- to 3-pound fully cooked quarter-cut, spiral-cut ham
2/3 cup packed light brown sugar
1 tablespoon apple cider vinegar
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon ground cinnamon

Brown Sugar Glazed Ham image

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the ham in a roasting pan fat-side up. Score the fat with a crisscross pattern. Cook the ham for about 1 hour to allow the scored fat to open up.
  • In the meantime, in a small saucepan over medium heat, stir together the brown sugar, apple jelly, mustard, vinegar, ginger and garlic along with 2 tablespoons water. Bring to a simmer and cook for about 2 minutes until it has a smooth syrupy consistency.
  • Remove the ham from the oven. Generously brush the ham with half of the glaze. Place back in the oven and bake an additional 1 hour and 30 minutes, basting with the remaining glaze every 20 minutes. If the ham starts to get too brown, cover with foil. Remove from the oven, cover and allow the ham to rest for 30 minutes before slicing and serving.
