CARROT APPLE CHICKEN NUGGETS
For babies and toddlers. I tried them and they are pretty bland for my tastes but my little kids ate them up so good for them! If making them for older kids definitely add some salt and pepper and seasonings.

Steps:
- Blend all ingredients except eggs and bread crumbs. The result should be a wet meat mixture that holds its shape if formed into tablespoon sized balls. Add more oats if mixture is too wet to hold. If for some reason mixture is too dry add some water or apple sauce.
- Working with a tbsp at a time, form small balls.
- Dip into egg then coat in bread crumbs. Pat ball into small patty about 1/2 inch thick. Coat all sides in fine bread crumbs, then place on a greased cookie sheet. Continue with all of the meat mixture. Sprinkle nuggets with kosher salt.
- Bake nuggets for 30 minutes at 400ºF or until done (nuggets do not brown very much).
- Put leftover nuggets into a freezer bag and freeze, when needed remove from bag and heat in a 425ºF oven for about 10 minutes or until heated through.

- In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.
- Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.
- Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.

- Sprinkle chicken with thyme, salt and pepper.
- In large frypan, heat half of the oil over medium high heat; brown chicken all over.
- Transfer to plate.
- Add remaining oil to frypan.
- Cook apples and onion, stirring occasionsally, until golden, about 5 minutes.
- Add apple cider, bring to boil, stirring and scraping up brown bits from pan.
- Return chicken to frypan.
- Cover and cook over medium low heat, turning once, until no longer pink inside, about 7 minutes.
- Transfer chicken to serving platter.
- Whisk vinegar with cornstarch; whisk into frypan and cook, stirring, until glossy and thickened, about 1 minute.
- Pour over chicken.
APPLE CHICKEN NUGGETS RECIPE

- 1) Combine first seven ingredients in a bowl. Mix together with your hands or spoon. Shape into small patties. 2) Put bread crumbs in a shallow dish and press the pieces into the coating 3) Heat enough oil for shallow frying in a large frying pan. Add nuggets and cook about six minutes, three minutes per side, turning occasionally, until light golden and cooked through. Dry on a paper towel or rag and cool. Serve with a side of vegetables and fruit, and your favorite dipping sauce! TO BAKE (instead of pan fry): Bake at 425 for about 15-20 minutes until firm to the touch. Freezing Directions: Put 4-5 nuggets into pint size freezer bags for individual servings and freeze. To Serve: Microwave for about 1-2 minutes, may be a little mushy. You can defrost in the fridge, and heat them up in the oven, stove top or toaster oven until crispy again.

- Preheat oven to 425 degrees F (220 degrees C). Spray a baking sheet with non-stick cooking spray.
- Trim any fat from chicken and cut into 1-inch cubes.
- In a bowl, beat the eggs with the water and add the chicken.
- Combine the parsley, thyme, red pepper, bread crumbs, wheat germ, basil and pepper. Stir in the oil with a fork and mix well to distribute evenly. Pour seasoning mixture into a resealable plastic bag and toss the chicken pieces to coat.
- Place coated chicken pieces on the prepared baking sheet and bake at 425 degrees F (220 degrees C) for 10 minutes, turn the pieces, and bake for an additional 5 minutes.
