SHORTCUT APPLE CIDER DOUGHNUTS
Steps:
- Add enough oil to a Dutch oven or other frying vessel of choice to be 2 inches deep. Heat the oil to 350 degrees F (it will take a few minutes for the oil to heat up).
- Put the apple juice concentrate in a small saucepan and bring to a boil over high heat. Then reduce to a low boil and cook until reduced by half and it's thickened and glaze-like, about 15 minutes. Transfer to a small heatproof bowl.
- Add the sugar and cinnamon to a small bowl and stir to combine.
- Remove the biscuits from the can and use a 1 1/2-inch round cutter to cut holes from the center of the biscuit dough.
- Once the oil is hot, add the doughnuts 3 to 4 at a time (the doughnuts should have room to bop around). Cook until golden brown on both sides, about 2 1/2 minutes total (flipping once). Repeat with the remaining doughnuts.
- Transfer to a paper-towel-lined plate to soak up the grease.
- Dip both sides of the doughnut in the glaze, then sprinkle the cinnamon-sugar on the "right-side-up" side. Transfer to a cooling rack so any excess glaze can drip off. Serve warm.
APPLE CIDER COOKIES

- Heat oven to 375°F. In small bowl, mix sugar, 1 teaspoon of the apple cider drink mix and 1/2 teaspoon of the cinnamon; set aside.
- In large bowl, stir cookie mix, softened butter, egg, remaining apple cider drink mix and cinnamon with spoon until soft dough forms. Stir in apple pieces until combined. Shape dough into 40 (1 1/4-inch) balls. Roll balls in sugar-spice mixture. Place 2 inches apart on ungreased cookie sheets. Discard sugar-spice mixture after rolling balls.
- Bake 7 to 9 minutes or until edges are set and light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.

I adapted an old oatmeal raisin cookie recipe I had to match a more autumnal feel, and it turned out really good. The apples came through nicely and the cookie itself is light, soft, and nicely crumbly.

- Preheat oven to 375 degrees F (190 degrees C).
- Beat white sugar, brown sugar, eggs, butter, shortening, baking soda, cinnamon, vanilla extract, salt, baking powder, and nutmeg together in a bowl with an electric mixer on medium speed until smooth; stir in oats, apples, and flour until dough is evenly combined. Drop dough by rounded tablespoons, about 2 inches apart, onto baking sheets.
- Bake in the preheated oven until cookies are lightly browned, 9 to 11 minutes. Transfer cookies to a wire rack to cool, 3 to 5 minutes.

- Cut in butter until mixture resembles coarse crumbs.
- Stir in apple cider until soft dough forms and leaves sides of bowl.
- Turn out on floured surface. Knead into a ball and pat out to 1/2 inch thickness.
- Cut into biscuits. Place 1 inch apart on ungreased cookie sheet.
- Sprinkle with cinnamon. Prick with fork.
- Bake 12 to 15 minutes at 450 degrees.
- Cool on rack.
