APPLE DUMPLINGS

Steps:
- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
- Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
- Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
- Serve, spooning some of the sweet sauces from the pan over the top.
APPLE DUMPLING PUDDING (1943)
From 1943 "The Modern Family Cook Book" by Meta Given. I haven't tried this yet. Saved so I remember to do so. There is another version of this on this site that the poster said was a "very old" recipe but it was different than this one.

- Sift flour, measure, and resift with sugar, baking powder, and salt, into mixing bowl.
- Add butter and mix with finger tips.
- Combine beaten egg and milk and pour into dry ingredients; beat until thoroughly mixed.
- Heat the applesauce, combine with cinnamon and lemon juice, and pour into a large baking dish (10x6.5x2 inches).
- Drop batter by tablespoonfuls onto the hot applesauce. Cover and bake in a hot oven (450 degrees) for 25 to 30 minutes, until crust is golden brown.
- Serve with cream or top milk.

~ APPLE DUMPLINGS MY WAY ~
This is my recipe & first time ever making apple dumplings. I had some leftover pie dough from Thanksgiving I wanted to use up and had extra apples left as well. So, this is what I made and let me tell you they were delicious! So easy to make too. Save time by making your crust ahead and keep refrigerated until ready to make....

- 1. Make your dough by placing flour, salt and sugar in food processor, hit pulse button a few times to mix. Next add the shortening and pulse - then butter, until a loose crumbly mixture is formed. Add water a little at a time and when it starts coming together and forming a ball, remove and form a disc shape. Wrap in plastic wrap and chill while making syrup. If no food processor, mix flour, salt and sugar in a bowl, cut in the butter and shortening with a pastry blender until crumbly. Stir in water until holds together well. Not too sticky though.
- 2. In a saucepan add 1 cup sugar, 2 cups water, 3 tablespoons butter and cinnamon. Whisk together.Bring to a boil, then simmer for about 5 minutes, stirring occasionally. Should take on a syrupy appearance. It will more so as it cools. Set aside to cool.
- 3. In a small bowl, mix together the sugar and cinnamon. Set aside. Core and peel apples. Roll out dough to 1/8th - 1/4 inch thickness, on lightly floured surface. I used a bowl and cut out 4 - 6 inch circles. After cut you can roll thinner and larger if need be.
- 4. Place an apple in the center of each circle and fill each cavity with 1 1/2 tablespoon of cinnamon sugar. Place 1 piece of butter into each cavity as well. Bring dough up to meet at the top of apple and seal.
- 5. Place apples in an 8 x 8 square baking pan or a little larger. I then sprinkled tops with a little more cinnamon and sugar. Place in 425 degree oven for 15 minutes. Pour syrup over apples.
- 6. Reduce heat to 350 and bake an additional 45 minutes. Basting a few times with syrup. I tested the apples with a thin knife for tenderness. Remove from oven and cool some before serving. This gives the sauce some time to thicken up.
- 7. Serve apples in a bowl and ladle each with more syrup. Can be served with a scoop of ice cream. Delicious!

- In a large bowl, combine flour and salt; cut in shortening until the mixture resembles coarse crumbs. Sprinkle with water, 1 tablespoon at a time, and toss with a fork until dough can be formed into a ball. Divide dough into four parts. , On a lightly floured surface, roll one apart to fit the bottom of an ungreased 13-in. x 9-in. baking dish. Place in dish; top with a third of the apples. Combine sugar and cinnamon; sprinkle a third over apples. , Repeat layers of pastry, apples and cinnamon-sugar twice. Roll out remaining dough to fit top of dish and place on top. Using a sharp knife, cut 2-in. slits through all layers at once. , For syrup, bring water and sugar to a boil. Cook and stir until sugar is dissolved. Pour over top crust. Bake at 400° for 35-40 minutes or until browned and bubbly. Serve warm with whipped topping or ice cream if desired. Garnish with mint if desired.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

- Combine applesauce, brown sugar, 3/4 tsp nutmeg and cinnamon in a large saucepan.
- Heat over medium low heat untilsugar is dissolved and sauce is bubbling.
- In mixing bowl combine flour, baking powder, salt and 1/4 tsp nutmeg.
- Beat the egg, stir into buter and milk and add all at once to flour mixture.
- Stir together until just moistened and stiff.
- Drop by heaping TBS onto bubbling applesauce.
- Cover and cook 20 minutes.
- Do not lift lid.
- Serve with pouring cream or whipped cream.

- In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide into 8 portions. Cover and refrigerate at least 30 minutes or until easy to handle., Preheat oven to 350°. Roll each portion of dough between 2 lightly floured sheets of waxed paper into a 7-in. square. Place an apple on each square. Place 1 teaspoon butter and 1 teaspoon cinnamon sugar in the center of each apple., Gently bring up corners of pastry to each center, trimming any excess; pinch edges to seal. If desired, cut out apple leaves and stems from dough scraps; attach to dumplings with water. Place in a greased 13x9-in. baking dish. - Heat oven to 180C/160C fan/gas 4. Melt the butter, sugar and golden syrup in a pan with 100ml water. Bring to a simmer, add the apples and cook for 10-15 mins until they're starting to soften - it will be quite saucy. Add a generous pinch of salt, taste and check the balance, adding more if you like. If your pan isn't ovenproof, pour into a baking dish about 20 x 30cm, or two smaller ones.
- Tip the flour into a bowl. Mix with the baking powder, sugar, cinnamon and a pinch of salt. Rub the butter into the mixture with your fingertips until it resembles damp sand. Add the milk, stir with a cutlery knife until it starts to clump together, then use your hands to bring the dough together, picking up any flaky bits. Don't overwork it or your dumplings will be heavy. Divide into 12 golf ball-sized pieces and roll into dumplings. Arrange over the apples, leaving little gaps here and there. Sprinkle with a little extra sugar (brown or caster) and bake for 25 mins until the dumplings are puffed up and golden. Let rest for a few mins and serve with plenty of cold cream.
