TRADITIONAL APPLE NOODLE KUGEL
Sweet apple and noodle dish of east European origin. Kugels can be made in many flavors, both sweet and savory. Serve either warm or cold, as a side dish or a dessert. Like lasagna, kugel tastes better the day after it is made. Jonagold and Rome Beauty are two apple varieites ideal for this dish.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
- Beat cream cheese and brown sugar together in a bowl using an electric mixer until smooth and creamy; beat in cottage cheese, egg, egg whites, vanilla extract, cinnamon, and nutmeg until well combined. Fold noodles and apples into cheese mixture by hand; spread into the prepared pan.
- Bake in the preheated oven until kugel is lightly browned and firm, 45 to 50 minutes.

LASAGNA NOODLE KUGEL

- Spray an 8 by 8-inch glass baking dish with nonstick spray and set aside.
- Preheat the oven to 350 degrees F.
- Cook the noodles to al dente according to the package directions and drain. Place the noodles in a single layer on a cutting board and use a pizza cutter to slice into 1-inch wide strips. Toss the noodles and 1 tablespoon of the butter together in a medium bowl.
- Puree the remaining butter, cream cheese, sour cream, eggs, sugar, vanilla extract, and salt in a blender until thoroughly combined, 30 to 45 seconds. Pour the cream cheese mixture over the noodles, add the apricots and raisins, and stir to combine. Transfer the noodle mixture to the prepared pan and sprinkle with the remaining 2 tablespoons of sugar and the nutmeg. Cover with foil and bake for 35 minutes. Uncover and continue to bake until the pudding is set, slightly puffed, and golden around the edges, 15 to 20 minutes. Cool for 15 minutes before serving.

- Preheat the oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook until tender, about 8 minutes. Drain, and rinse noodles, and set aside.
- In a medium bowl, mix together the Cheddar cheese, ricotta cheese, egg, white sugar, and almond extract. Spread one can of apple pie filling in the bottom of a 9x13 inch baking dish. Layer half of the noodles to cover the filling. Spread the cheese mixture over the noodles. Top with the remaining noodles, and spread the remaining can of apple pie filling over the top of those.
- In a small bowl, stir together the flour, 6 tablespoons brown sugar, oats, cinnamon and nutmeg. Mix in margarine until the mixture is crumbly. Sprinkle over the top of the pie filling.
- Bake for 45 minutes in the preheated oven. Cool for 15 minutes. While the lasagna cools, stir together the sour cream and 1/3 cup brown sugar. To serve, cut into squares and top with sour cream as a garnish.

- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking dish. Break the matzo sheets into pieces, and soak in a bowl of water until soft. Drain in a colander, mashing to squeeze the water out.
- In a separate bowl, mix together the eggs, salt, sugar, oil and cinnamon. Add the soaked matzo, and mix well. Fold in the apples and raisins. Spoon into the prepared baking dish, and spread evenly.
- Bake for 45 minutes in the preheated oven, until nicely browned and apples are tender.

- Prepare lasagna according to package directions; drain.
- Spread one can apple pie filling in a greased 9 x 13 x 2-inch pan, slicing any extra-thick apples.
- Layer four pieces of lasagne over apples.
- In a bowl, mix together ingredients for cheese filling: ricotta cheese, egg substitute, almond extract and 1/4 cup white sugar.
- Spread evenly over lasagne and top with the remaining four pieces of lasagne.
- Spoon remaining can of apple pie filling over lasagne.
- In a small bowl, crumble together topping ingredients: flour, cinnamon, margarine, 6 tablespoons brown sugar, quick oats and nutmeg.
- Sprinkle over apple filling.
- Prepare sour cream garnish by mixing sour cream and remaining brown sugar.
- Chill.
- Bake at 350º F for 45 minutes.
- Let stand 15 minutes.
- Cut into serving pieces and top with a dollop of sour cream garnish.

- In a blender, combine the cottage cheese, vanilla and salt; cover and process until smooth. Toss apples with cinnamon., Combine applesauce and raisins; spread 3/4 cup into a greased 13x9-in. baking dish. Layer with a fourth of the noodles, and a third of the applesauce mixture, cottage cheese mixture and apples. Repeat layers twice.
