APPLE-MAPLE FRENCH TOAST
In this fall breakfast recipe, soft caramelized apples are a heavenly topping for a thick slice of fluffy French toast.

Steps:
- Whisk the eggs, milk, vanilla, and a pinch of ground cinnamon in a 9-by-13-inch baking dish. Add the bread in a single layer, turning until all the egg is absorbed.
- Meanwhile, heat a large skillet over medium heat, melt 1 tablespoon butter, and add apples, stirring to coat until starting to caramelize. Add the water, cooking until water has evaporated and apples are tender, about 4 minutes.
- Pour in the maple syrup and a dash of ground cinnamon; simmer for a minute to combine.
- In a large, heated nonstick skillet, melt about 1 tablespoon butter and saute the soaked bread until golden brown on each side, about 4 minutes. Place French toast on a plate and top with apple-maple mixture, plus more butter if you'd like!

- In a small saucepan, combine the brown sugar, butter and syrup. Cook over medium heat for 5-7 minutes or until thickened. Pour into an ungreased 13x9-in. baking dish. Arrange apples over top., In a large bowl, beat eggs, milk and vanilla. Dip bread slices into the egg mixture 1 minute; place over apples. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, 35-40 minutes. Meanwhile, in a small saucepan, combine syrup ingredients; heat through. Serve with French toast.

- Preheat oven to 350 degrees F (175 degrees C). Prepare a 7x11-inch baking dish with cooking spray.
- Beat eggs, half-and-half, milk, white sugar, and vanilla extract together in a large bowl; add bread cubes and stir to coat. Let soak until bread is moist, at least 10 minutes.

Perfect for a weekend brunch, you can chill 2 hours or up to 24 hours! Use either French or Italian if possible day-old bread (for easier slicing) for this. You can increase the apples to 3 if desired, roughly half a loaf of bread should be enough for this recipe!

- Butter a 9-inch baking dish.
- Melt butter in a medium skillet over medium-high heat.
- Add in apples and saute until just softened (about 3 minutes) remove from heat.
- Stir in the raisins, walnuts, sugar, cinnamon, nutmeg and 1/2 cup sour cream.
- In a medium bowl beat eggs, half and half, maple syrup and remaining 1/2 cup sour cream.
- Layer HALF of the sliced bread in the bottom of the prepared baking dish.

- Combine the cider and cornstarch in a small bowl, stirring with a whisk.
- Melt 2 teaspoons butter in a large non-stick skillet over medium heat.
- Add shallots to pan, and cook for 1 minute, stirring frequently.
- Add the cider mixture, cider, and syrup to pan, and bring to a boil, stirring frequently.
- Reduce heat to low, and cook for 3 minutes, or until apples begin to soften, stirring occasionally.
- Set aside and keep warm.
- Cut a horizonal slit through bottom crust of each bread slice, to form a pocket, and stuff 1/2 ounce of cheese evenly into each pocket.
- Combine fat-free milk, buttermilk, and the next 5 ingredients through and including egg white in a shallow dish, stirring well with a whisk.
- Working with 1 stuffed bread slice at a timer, place bread slice into milk mixture, turning gently to coat both sides.
- Heat a large non-stick skillet over medium-high heat .
- Melt 2 teaspoons butter in pan.
- Add 3 coated bread slices to pan and cook for 2 minutes on each side, or until lightly browned.
- Repeat procedure for remaining 2 teaspoons butter, and 3 coated bread slices.
- Place 1 french toast slice onto each of 6 plates, and top with 3 tablespoons sauce, and 1 1/2 teaspoons pecans.

- First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.
- In a wide bowl, beat your eggs with your maple syrup until the mixture is slightly thickened.
- Beat in the milk, vanilla, nutmeg and salt.
- Place your bread slices in the mixture and allow them to soak in the mixture for approximately 5 minutes until saturated well.
- Next you will want to preheat your skillet over medium heat and add 2 Tablespoons of butter.
- Once your butter has melted reduce your heat to medium-low and saute bread slices for about 5-6 minutes per side, making sure that you flip each slice over every 2 minutes or so to make sure that they brown evenly.
- You may have to cook in 2 batches if you use a smaller skillet.
- Sprinkle with confectioners' sugar, and place random berries around the plate for a nice look and tasty meal.
