APPLE PIE IN A JAR DRINK
This tastes just like apple pie! Great in the autumn around a campfire or on a hay-ride. Put it in canning jars with rings and lids for that down-home country appeal.

Steps:
- Place the apple cider, apple juice, cinnamon sticks, and sugar into a large pot. Bring to a boil over medium-high heat, stirring until the sugar has dissolved. Remove from the heat, and discard the cinnamon sticks. Allow the mixture to cool to room temperature, then stir in the grain alcohol. Pour into quart-size canning jars, seal with the lids and rings, and refrigerate until ready to serve.

APPLE PIE IN A BOTTLE
Here's a drink that's great to take on camping trips with good friends, perfect for sharing around the campfire. This is my own recipe that we take to SCA camping events in the Pacific Northwest (other folks have their "secret" recipes they don't share). You know you have good Apple Pie when you take a sip and you can even taste the crust. :) You don't want to miss out on this one!

- Mix together liquid ingredients; stir in apple pie spice.
- Pour into a 32 oz bottle, add the cinnamon sticks, and refrigerate for at least a week before serving. (We often just store it in our cool garage, which works fine.).
- Apple Pie is a group drink, often shared straight out of the bottle with folks all sitting around the campfire.
- Notes: if you'd like your apple pie somewhat less sweet, add some more organic cider and/or regular apple cider to it, to taste. Also, you can use regular apple cider for the entire amount rather than organic, if you need to, but the organic has a different flavor and a much different "mouth feel" because it has more pulp in it. Get and use the organic, if you can.
- Note #2: Absolut Red Label has gotten more difficult to find these days. Try to use higher proof vodka if you can, but if the Red Label is too expensive or unavailable, you can substitute another equal quality high proof vodka. Potato vodka can also be used, but check the taste before using to make sure it's something you like the taste of and that it's not too sweet for you. Higher proof is generally drier in taste.

This is delicious. It can be eaten straight out of the jar, baked in a pie shell, served over ice cream, etc. It is tricky to NOT make a mess, but it is so worth the stickiness!

- Heat 7 1 quart jars while peeling the apples, I pour lemon juice on them to keep them from browning. Once the apples are peeled mix the sugar, cornstarch, cinnamon, nutmeg, salt and water in a large kettle. Heat this over high heat, stirring almost constantly. Bring to a boil, remove the jars from the boiling water and fill with the raw apples. When the sauce is ready it will be clear and thick. Pour the sauce over the apples in the jars, using a knife around the edges to release air bubbles. Fill to 3/4 of an inch from the top. Wipe the rims, place lids on jars, boil in a boiling water bath for twenty minutes. Sometimes they do ooze after being removed from the heat, these I put in the refrigerator and they are eaten first!

SALTED CARAMEL APPLE PIE

- Preheat oven to 375°. On a lightly floured surface, roll half of dough to 1/8-in. thick circle; transfer to a 9-in. pie plate. Trim crust even with rim., In a large saucepan, add 1 cup plus 2 tablespoons of sugar, butter and 1/4-cup water. Gently stir, pulling edges towards center until mixture is is a deep golden brown, 15-20 minutes. Remove from the heat; immediately and gradually whisk in the cream until blended; add salt. Set aside., Toss apples and lemon juice in a large bowl; set aside. In a small bowl, combine remaining 1/3 cup sugar, flour, apple pie spice, and bitters; toss with apples to coat., Layer 1/3 of the apples in bottom of crust, then spoon 1/3 of the caramel sauce in an even layer. Continue layering with half the remaining apples and caramel sauce. Repeat with remaining apples and caramel. With remaining dough create a lattice crust; place on top of apples., Brush top with egg; sprinkle with sugar and additional salt, if desired. Bake 20 minutes; reduce oven temperature to 325°, bake until golden brown and apples are tender, 25-35 minutes more. Cool completely. If desired, serve with vanilla ice cream and caramel sauce.

- In a large bowl, toss apples with lemon juice and set aside. Pour water into a Dutch oven over medium heat. Combine sugar, cornstarch, cinnamon, salt, and nutmeg in a bowl; add to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly.
- Add apples and return to a boil. Reduce heat, cover and simmer until apples are tender, about 6 to 8 minutes. Cool for 30 minutes.
- Ladle into 5 freezer containers, leaving 1/2 inch headspace. Cool at room temperature no longer than 1 1/2 hours.
- Seal and freeze. Can be stored for up to 12 months.
