- Preheat oven to 325°. In a bowl, beat oil, eggs and vanilla. Combine flour, sugar, cinnamon, salt, baking soda, cloves and baking powder; beat into the egg mixture. Stir in apples, raisins and nuts. Pour into two greased 9x5-in. loaf pans. Bake until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool 10 minutes before removing from pans to wire racks.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- Place butter, sugar, and 1 egg in large bowl. Beat well. Beat in second egg. Stir in milk and vanilla.
- In another bowl measure in flour, baking powder, and salt. Stir in raisins. Pour all at once into batter. Stir to moisten only. Spoon into greased loaf pan.
- Bake in 350 degree F (175 degree C) oven for 1 hour or until it tests done. Cool 10 minutes. Turn out of pan. Cool on rack. Wrap to store. Allow to ripen a day or two to improve flavor. Serve buttered.

CHRISTINA'S APPLE RUM RAISIN PIE

- Preheat the oven to 425 degrees F.
- To make the crust: Sift the flour, sugar, salt, and cinnamon into a medium-size mixing bowl. Using a pastry cutter or your fingers, work the butter into the flour mixture until coarse crumbs form. Mixing with a fork, add ice water, 1 tablespoon at a time, just until the dough holds together. Press the dough into a ball and divide in 1/2. Flatten each piece into a disk, wrap in waxed paper and refrigerate for 1 hour.
- To make the filling: Put the raisins in a medium-size bowl and pierce them with a fork so they will soak up the rum. Pour rum over raisins and let stand at least 1 hour. Strain, return raisins to the bowl and stir in pie filling. Set aside.
- On a lightly floured surface, roll out 1 piece of dough and fit it into a 9-inch pie plate. Pour in the filling and sprinkle the gelatin over the top. Roll out the remaining dough, fit it over the top of the pie, pinching the edges together to seal. Trim and crimp the edges. Pierce the top of the pie in a few places with a fork to make steam vents.
- Bake for 10 minutes and then reduce oven to 325 degrees F. and bake until crust is browned, about 45 minutes. Place on a rack to cool. If using icing, heat it in the microwave just until melted, then drizzle over the pie. Cut into wedges and serve.

- In a large bowl, combine milk, eggs, vanilla and 1/2 cup of the brown sugar.
- Stir in bread cubes; let stand for at least 30 minutes; stirring occasionally.
- In a small bowl, combine raisins and rum or apple juice. Set aside.
- In another bowl, toss together apples, cinnamon and remaining brown sugar.
- Add raisin and apple mixtures to the softened bread, mixing well.
- Spread evenly in a greased 8"x8"x2" baking pan.
- Drizzle with the melted butter.
- Bake in a 375 degree Fahrenheit oven for 40 to 50 minutes or until golden brown and apples are tender.
- Serve warm or cold.
RUM RAISIN BREAD
This bread is a little sweeter and richer than the usual raisin bread. For best results, soak the raisins in rum overnight and measure the raisins after soaking.

RUM RAISIN APPLE CAKE - WSJ RECIPES

- Preheat oven to 350 degrees. Line a medium (8- by 4- by 2½-inch) loaf pan with parchment. Use enough parchment to create a 3-inch overhang so that the cake can be lifted out of the pan once baked.
- Place raisins in a small bowl. Cover with boiling water. Let sit a minute or two, then drain. Bring 2 tablespoons rum to a boil and pour over raisins. Set aside to macerate while you prepare the batter.
- Use an electric mixer to whip butter until smooth. Pour in 1 cup confectioners’ sugar, a bit at a time, and continue to beat until mixture is pale and creamy.
- Place a sieve over a separate mixing bowl and sift in flour, salt and baking powder. Use a rubber spatula to gently but decisively fold flour mixture into egg mixture.
- Bake the cake until a knife inserted into the center comes out clean, 50-60 minutes. Remove from oven, but do not remove cake from pan. Brush top of cake with warm apricot jam.
- Just before serving, remove cake from pan using parchment overhang. Discard parchment. In a small pan, combine remaining tablespoon of rum with remaining ⅓ cup confectioners’ sugar.
