GINGER APPLESAUCE

When it's apple-picking time, it's also time for all the delightful treats you can make with them, including applesauce. This is my favorite way to prepare it. It's simple to do and it makes the whole house smell like fall. -Renee Pajestka, Brunswick, Ohio

APPLESAUCE GINGERSNAP DROPS

I love these gingersnaps. They don't include any egg, and a very small amount of margarine, so they are lower in fat and cholesterol than most other gingersnap recipes I've tried. I also like that they are drop cookies. Besides cutting the prep time by removing the necessity of chilling before baking, this also makes for a lot less mess on your hands. It also feels nice to sneak a bit more fruit into the family's diet. The end result is a big, light, crispy-outside, chewy-inside "snappy" snap that is great with coffee, cocoa, or milk, and travels well. They are also sturdy enough to sandwich together - you might try with a light cream cheese frosting, or even vanilla ice cream, between two cookies for a kid-pleasing treat.

GINGERSNAPS!

I have been having a real craving for gingersnaps lately. I made five batches for Christmas, and I am still in the mood for them - they are just sooo good. One of my friends said these were the best gingersnaps she had ever had. How 'bout that, eh? NOTE: it is important to use pastry flour for these cookies, otherwise the dough will be strange and unworkable. I tried a batch using supposedly "all-purpose" whole wheat flour (but it was really formulated for bread) and ended up throwing out the dough because it just didn't work. You can use all whole wheat flour, or all white flour, just so long as it is soft.

Steps:

  • Sift the dry ingredients together in a large bowl.
  • Warm the molasses, and mix the molasses, oil and water.
  • If the molasses is not warm enough to dissolve into the water, they can all be warmed a little together- the microwave is fine for this.
  • Mix the wet ingredients into the dry ingredients.
  • The dough should be quite stiff, and not particularly sticky.
  • If it is too soft and sticky, add a little more flour.
  • Preheat the oven to 350°F.
  • Roll out the dough to about 1/4" thick, and cut out with cookie cutters.
  • Place cookies on cookie trays which have been lined with parchment paper, or lightly oiled.
  • Re-roll and cut the scraps, until the dough is gone.
  • Bake for 10 to 14 minutes, until lightly browned and set- they will harden up as they cool.

CHUNKY CINNAMON-GINGER & BROWN SUGAR APPLESAUCE

If you're looking for something comforting to warm you from your lips to your toes, this applesauce will do the trick. I like to use brown sugar in my applesauce sometimes instead of white, plus I like to add ginger in addition to cinnamon to tease the taste buds with subtle spicy warmth. Serve warm and enjoy two types of heat! My family of four gives this applesauce eight thumbs up, and I hope you enjoy it too! (Note: Cooking time includes time needed to cool the applesauce to a manageable temperature.)
