Steps:

  • Preheat grill for high heat.
  • In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands. Form the mixture into 8 hamburger patties.

Steps:

  • Heat a gas or charcoal grill to high. Brush the grill grates with oil.
  • For the coleslaw: Combine the carrot, cabbage, onion, vinegar, mayonnaise, oil and sugar in a large bowl. Season with salt and pepper to taste. Let the slaw sit at least 15 minutes before serving.
  • For the spice rub: Whisk together the ancho chile powder, paprika, coriander, cumin, mustard powder, oregano, cayenne and 1 teaspoon each salt and pepper in a small bowl.
  • For the burgers: Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 3/4 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper. Sprinkle the spice rub on one side of the burgers then brush with oil. Grill, spice rub-side down first, covered, until golden brown and slightly charred, about 4 minutes per side for medium.
  • While the burgers cook, toast the buns on the grill until lightly charred, 10 to 15 seconds. Set aside.
  • Add 2 slices of cheese to the tops of each burger. Cover the burgers with the grill lid, large domed lid or large metal bowl and count to 10 until the cheese is melted.
  • Place the burgers on the bottom buns and spoon about 2 tablespoons of the BBQ sauce on each. Top with the sliced pickled jalapenos, some of the coleslaw and the top buns and serve immediately.

3-Way Onion Burger with Applewood Bacon and Aged Smoked Cheddar on Kaiser Roll image

Steps:

  • Melt butter in large saucepan. Add the garlic, tomato paste and water. Stir until tomato paste dissolves. Add the chopped chipotle peppers (seeds removed), peppers and sauce to the pan. Stir to combine. Add the remaining ingredients and simmer for about 30 minutes.
  • Strain and set aside.
  • Caramelized Onions:
  • Thinly slice the red onions. Melt butter in skillet and add garlic, onions and salt and pepper, to taste. Cook stirring occasionally until wilted. Add 1 cup Chipotle BBQ sauce simmer for 30 minutes.
  • Beef Patties:
  • Cut the root ends off the scallions. Brush with olive oil and place on grill. Grill both sides until grill marks appear. Remove from the grill to a cutting board. Chop and set aside.
  • Place ground beef in a bowl and add chopped scallions, about 1 tablespoon salt and 1 tablespoon ground pepper. Mix together and form into patties about 1/2-inch thick.
  • Wrap 1 slice applewood bacon around each patty and place on grill, about 5 to 6 minutes on each side for medium-well. Top burgers with cheese the last minute of cooking. Place on platter, cover with foil and set aside.
  • Heat oil in a deep-fryer to 350 degrees F. Cut the onions into 1/4-inch thick slices and place in large bowl. Put flour, cornmeal, and 2 tablespoons salt in another bowl. Whisk the eggs in a small bowl, add to the onions and stir to evenly coat. In batches, place the onions in flour mixture and toss until well coated.
  • Fry in oil until golden brown and set aside on paper towels to drain. Sprinkle with salt.
  • Assemble burger:
  • Toast kaiser rolls. Place 1/4 cup caramelized onions on bottom bun. Add burger patty and top with fried onion rings.

Jalapeno-Red Bean-BBQ Burgers image

Steps:

  • Heat oil in nonstick skillet over medium heat.
  • Add next onion, plum tomato, jalapeno, garlic and chili powder; sauté 5 minutes.
  • Cool slightly.
  • Using fork, coarsely mash beans in bowl.
  • Combine with onion mixture, breadcrumbs, 2 tablespoons of the barbecue sauce and egg white.
  • Shape mixture into four 1/2-inch-thick patties.
  • (Can be prepared 4 hours ahead. Cover and chill.) It will look as though these little burgers will just fall apart and turn to mush, but they stay together really well once they"hit the pan"!
  • If grilling, oil the rack or spray grill rack with nonstick spray, then fire up coals to medium heat.
  • If pan-frying, heat a little olive oil over medium heat.
  • Place patties on grill or in skillet and cook until golden brown and heated through, about three minutes per side.
  • Place burgers on buns.
  • Serve with more barbecue sauce, and cheese, tomato, lettuce, avocado, or whatever topping you like!

Steps:

  • Use your hands to mix Ground Beef, Sauce, Onion, Garlic, Salt & Pepper.
  • Slowly mix in Bread Crumbs until it gets thick, but not so much that they are really noticeable.
  • Separate into four equal parts.
  • Roll into large balls then gently flatten. Do not press, pound, or smash.
  • Grill until you reach desired temperature. (I use a George Forman Grill).
  • Take off the grill and top with shredded cheese.
