BEST FRIED GREEN TOMATOES
You can also fry up red tomatoes with this recipe but make sure they are not over ripe or they will be mushy. Serve these tomatoes outside with a glass of iced tea one summer night and enjoy the sunset with someone you love.

Steps:
- Slice tomatoes 1/2 inch thick. Discard the ends.
- Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.
- In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels.

ARKANSAS FRIED VEGGIE SKILLET
This recipe was given to me by my mother-in-law; it is so good! You can add anything else you want and it only makes it better. I recommend everyone at least give it a try! You can even add some bacon pieces. Serve with fried deer meat. You can use olive oil or vegetable oil instead of the bacon grease, if desired.

- Whisk milk and egg together in a large bowl. Pour cornmeal into another large bowl.
- Dip squash, potatoes, tomatoes, okra, onion, and green bell pepper into milk mixture; press vegetables into cornmeal to coat.
- Heat bacon grease in a large skillet over medium-high heat. Cook and stir vegetable mixture in hot grease until golden and tender, 15 to 25 minutes. Season with salt and black pepper.

- In a small bowl, stir together the flour, salt and pepper. Place the crushed saltine crackers in another bowl, and the beaten eggs in a third bowl.
- Melt the butter in a large skillet over medium heat. Dip each tomato slice in the egg to coat, then in the flour mixture. Dip the floured tomato slice back into the egg, and then into the cracker crumbs. Place the coated tomato slices in the hot skillet, and fry until golden brown on each side, about 3 to 5 minutes per side. Add more butter to the pan, if necessary. Serve hot!

- Remove the stems of the tomatoes then using a serrated knife, slice crosswise into slices about 1/4-inch inch thick.Break the eggs into a shallow bowl and season with salt and pepper. Set aside.Combine the cornmeal and flour in a second shallow bowl and season with salt and pepper. Season sliced tomatoes a few at a time with salt and pepper. Heat the oil in a skillet over medium heat. When it is hot but not smoking, dip the slices of tomato one at a time in the beaten eggs, letting the excess drain back into the bowl, roll them quickly in the breading, gently shake off the excess, slip them into the hot pan. Fry the tomato slices until they are golden on the bottom, about 2 to 3 minutes, then gently turn them with a spatula and continue cooking until both sides are golden. Drain them briefly on paper towels and eat at once!
