SEA BASS & ARTICHOKE SALAD

Serve this sea bass, couscous and artichoke salad with fresh herbs and lemon as a quick and easy supper for two. It takes just 20 minutes from prep to plate

Sea bass & artichoke salad image

Steps:

  • Cook the couscous following pack instructions, then mix with the artichokes. Whisk the mustard with the oil from the artichoke pack, along with ½ tbsp olive oil, then add it to the couscous. Toss the herbs into the salad, along with the lemon zest and juice, some seasoning and the watercress.
  • Heat the remaining oil in a large, non-stick frying pan over a medium-high heat. Season the sea bass skin, then place it, skin-side down, in the oil. Use the back of a fish slice to hold the fish down, as it will start to curl up a bit. Once the flesh is nearly all opaque, around 3 mins, flip over and cook for 1 min more. Divide the salad between two plates and place the fish on top.

175g pack chargrilled artichokes , roughly chopped
½ tsp Dijon mustard
1½ tbsp olive oil
½ small pack dill , leaves finely chopped
½ small pack parsley , leaves finely chopped
1 lemon , zested and juiced
2large handfuls watercress
2 sea bass fillets

Tomato, Artichoke and Feta Couscous Salad image

Steps:

  • In a large saucepan, combine water and salt; cover and bring to a boil. Stir in lemon juice. Stir in couscous; cover and remove from heat. Let stand for 5 minutes. Transfer couscous to large bowl and fluff with fork; let cool for about 15 minutes, fluffing with fork frequently.
  • Salad: Add tomatoes, feta cheese, onions, olives, artichoke and parsley to couscous; stir to mix.
  • Add vinaigrette and toss to ix. Add salt and pepper to taste.

  • In a pot, bring water to boil with a pinch of salt. Add Israeli couscous, cover, and simmer for 8 to 10 minutes, stirring occasionally, until cooked al dente. Drain and set aside.
  • In a large mixing bowl, combine cooked & drained Israeli couscous, cucumber, cherry tomatoes, green onion, marinated artichoke hearts, Castelvetrano olives, garlic, basil, balsamic vinegar, and extra virgin olive oil. Add salt and pepper to taste.
  • After the salad is fully combined, taste for seasonings and add extra balsamic vinegar, extra virgin olive oil, salt, and/or pepper, if you desire. Serve right away or cover it and put in the refrigerator until serving time.

  • Bring water to a boil in a medium saucepan and stir in salt. Add couscous and return water to a boil, cover and reduce to a simmer. Simmer couscous for approximately 10 minutes. Remove pan from heat and let sit for 5 minutes while still covered. Drain any excess water that might remain in the pan and pour couscous into a large mixing bowl.
  • While couscous is cooking, prepare the dressing. In a small food processor or blender, combine lemon juice, Dijon, chopped shallots, sugar, salt, black pepper, Parmesan cheese and olive oil. Process until completely mixed through.
  • Add pine nuts, artichokes, roasted red peppers and chopped parsley to bowl with the couscous and dressing. With a large spoon, gently stir to combine, being careful not to break up the artichokes.

  • Prepare couscous according to directions. (I cooked mine in salted, boiling water for about 5 minutes.)
  • In a blender, combine lemon juice, dijon, chopped shallots, oil and parmesan cheese and blend until smooth. (I also added a few Tbsp of water to get everything moving.)

  • To make the lemon-dill vinaigrette, place the vinaigrette ingredients in a bowl. Whisk together to combine. Set aside briefly.
  • In a medium-sized heavy pot, heat two tablespoons of olive oil. Saute the couscous in the olive oil briefly until golden brown. Add 3 cups of boiling water (or the amount instructed on the package), and cook according to package. When ready, drain in a colander. Set aside in a bowl to cool.
  • In a large mixing bowl, combine the remaining ingredients minus the basil and mozzarella. Then add the couscous and the basil and mix together gently.
  • Now, give the lemon-dill vinaigrette a quick whisk and add it to the couscous salad. Mix again to combine. Test and adjust salt, if needed.
