Potato and Pickle Salad image

Steps:

  • Place the potatoes in a large pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat. Cook the potatoes until they fall off a fork easily, 20 to 28 minutes; drain and set aside. When cool enough to handle, slice the potatoes in half.
  • In a large bowl, mix together the mayonnaise, pickles, pickle juice, mustard, salt and pepper to form a dressing. Add the potatoes, the red onions and eggs, and gently fold together to coat with dressing. Taste, and adjust the seasoning as needed. Garnish with parsley and paprika.

1 1/2 pounds small tri-colored potatoes
1/2 cup mayonnaise
1/4 cup chopped sweet pickles
3 tablespoons pickle juice
1 tablespoon yellow mustard
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1/2 medium red onion, thinly sliced
5 hardboiled eggs, chopped
2 tablespoons chopped fresh parsley, for garnish
Paprika, for garnish

Ital-Cal Asian Caesar Salad image

Steps:

  • Arrange the romaine on a large serving platter. Halve avocado, cutting around the pit. Pop out pit and scoop the flesh out of skin with a large spoon. Slice avocado and sprinkle with juice of 1/2 lemon.
  • Cover the lettuce with a generous layer of sprouts. Top sprouts with avocado, chopped pepper, fried noodles.
  • Juice the remaining 1/2 lemon sitting cut side up. The juice will spill over the sides of the lemon and the seeds will remain in the lemon. Combine with the minced garlic, wasabi, mustard, vinegar and Worcestershire sauce. Whisk in oil in a slow stream. Drizzle dressing back and forth over the entire salad -- do not toss. Serve.

2 hearts romaine, chopped
1 ripe avocado
1 lemon, halved
3/4 red bell pepper, remaining from above recipe for pizza, seeded and thinly sliced
2 cups fresh sprouts, snow pea sprouts or bean sprouts, your choice
Fried Chinese noodles: 1 cup thin fried noodles or 2 cups wide fried noodles
1 large clove garlic, minced
1/2 teaspoon wasabi paste
1 teaspoon Dijon mustard
1 tablespoon white wine vinegar or rice wine vinegar
1 teaspoon Worcestershire sauce
1/3 cup extra-virgin olive oil

Quick Pickled Asian Slaw image

Steps:

  • Toss the cabbage, cucumber and carrots together in a heatproof bowl, then set aside.
  • Bring the vinegars, sugar and salt to a boil in a small saucepan. Pour the vinegar mixture over the cabbage mixture, tossing to make sure all the veggies are covered. Let sit for 15 minutes. Use the slaw to add flavor to your favorite Asian bowl or sandwich. Vegetables can be kept in their pickling liquid in the fridge for up to 2 weeks.

  • In a large saucepan, bring 2 quarts of water to a boil. Gently drop the eggs into the saucepan straight from the refrigerator. Adjust the heat so that the water is simmering gently (around 190°F), and simmer the eggs for 6 minutes (longer, if you prefer your eggs firmer). Prepare a bowl of ice water. When the eggs are done, remove them with a slotted spoon and dunk them in the ice water to stop them from cooking further.
  • When the eggs are cool enough to handle, peel them and arrange them so they fit snugly into a nonreactive container. (I use a rectangular 4-cup glass container with a tight-fitting lid.)
  • Halve the cabbage and cut a "V" notch at the base to remove the core. Cut into bite-size pieces. Put the cabbage in a large nonreactive bowl and sprinkle with the salt. Massage the salt into the cabbage and set aside for 2 to 3 hours, tossing every 30 minuets or so. The cabbage is ready when it has shrunk and is soft and bendable.
