ASIAN STRAWBERRY SALAD WITH DRESSING
This recipe is one of my family's summer favorites. It tastes so light, sweet, tangy, and fresh! Works great as a side or stands well on it's own. I hope you enjoy.

Steps:
- For Dressing:
- Mix all ingredients together well and cover.
- Refrigerate for at least an hour before serving.
- For Salad:.
- Open package of Ramen noodles and throw out seasoning pouch.
- In a large sauce pan melt butter and add walnuts.
- Break ramen noodles into bite size pieces and add to sauce pan.
- Lightly brown walnuts and noodles in butter, stirring constantly (burns easily).
- Remove sauce pan from heat and set aside.
- Lightly toss chopped broccoli, lettuce, spinach, onions and strawberries in a large salad bowl.
- Pour the warm contents of the sauce pan over the salad and mix lightly to gently wilt the lettuce.
- Serve immediately with dressing.

- For the salad: Preheat the oven to 400 degrees F. In a small bowl, mix the ramen noodles, almonds, sunflower seeds and melted butter. Transfer to a baking sheet and toast in the oven, stirring occasionally, until browned, about 10 minutes. Remove from the oven and set aside to cool.
- Tear the lettuce and combine with the spinach, strawberries and cheese in a large salad bowl.
- For the dressing: Dissolve the sugar in the vinegar. Combine the oil, paprika, salt and garlic and then add to the sugar-vinegar mixture. Mix well and store in the refrigerator until ready to serve.
- Just before serving, sprinkle the crunchy topping over the salad green and toss the salad with enough dressing to coat the greens.

- Combine all in a large salad bowl and mix well to coat salad with dressing. Voila!
- Would be good with probably most viniagrettes but personally I make mine with Newman's Low-Fat Sesame Ginger Dressing! It really adds an asian twist and is relatively healthy.

- In a dry skillet over medium-high heat, toast the nuts, stirring frequently, until lightly toasted and fragrant. This will take about 3-4 minutes. Remove from heat and set aside to cool.
- Add all vinaigrette ingredients to a small lidded jar or bowl. Either shake jar vigorously or whisk together to combine.
- In a large bowl layer the greens, toasted nuts, strawberries, and feta. Pour the dressing over and toss to serve immediately.
