Steps:

  • Combine all ingredients except salt and ground pepper in a medium saucepan, and bring just about to a boil. Turn the heat a little lower, and simmer, uncovered, 10 to 20 minutes. Strain, taste and adjust seasonings.

2 cans (about 4 cups) chicken broth
2 tablespoons soy sauce
2 scallions, trimmed and cut into 1-inch lengths
2 thin slices fresh ginger, unpeeled, or 1/2 teaspoon ground ginger
Salt and freshly ground black pepper to taste

ASIAN SOUP STOCK

This recipe came from a Moosewood recipe book. This flavored broth needs only some tender young bok choy or snow peas, sliced seasoned tofu, and a splash of soy sauce to become a delightful soothing, and light soup.

Steps:

  • Combine all the ingredients in a large soup pot, cover, and bring to a boil.
  • Lower the heat simmer for 45 minutes to 1 hour.
  • Strain the stock and use it right away, or refrigerate in a covered container for up to 4 days, or freeze it for up to 6 months.

2 large onions or 2 bunches scallions, chopped
4 -5 large carrots, peeled and sliced

1/4 teaspoon whole black peppercorns or 1/4 teaspoon szechuan peppercorns
6 whole cloves
3 inches fresh gingerroot, sliced (about 1 1/2 ounces)
4 -5 dried shiitake mushrooms (optional)
2 large parsley sprigs
1/2 teaspoon salt

  • Place chicken carcasses into a large stock pot add the water and bring to a simmer for 30 minutes. Cover the lid to allow partial escape of the steam either through holes already in your lid or by leaving the lid slightly displaced.
  • Turn off the heat and wait 5 minutes before skimming any scum, foam or froth that may have accumulated on the surface.

  • Preheat oven to 375 degrees F. Take your napa cabbage half, and cut it in half again lengthwise. Place the cabbage on a sheet pan and drizzle lightly with oil. Roast for 25 minutes.
  • Meanwhile, in a large stockpot, heat 1 tablespoon oil over medium heat. Add the ginger and garlic and cook for 2 minutes, until fragrant but not browned. Add the fermented bean curd and cook for another minute. Then add the onion, carrots, scallions, daikon, kelp, dried shiitake mushrooms, and water. When the napa cabbage is done roasting, add it to the pot as well.
  • Bring to a boil, turn the heat down to low, and simmer with the lid on for 4 hours. Strain the stock, and season with salt to taste.
