ASIAN VEGETABLE-BEEF SOUP

- In a large saucepan, brown meat in oil on all sides; drain. Add the water, broth, sherry, soy sauce, onions, brown sugar, garlic, ginger, sesame oil and cayenne. Bring to a boil. Reduce heat; cover and simmer for 1 hour., Stir in the mushrooms, carrots and bok choy; cover and simmer 20-30 minutes longer or until vegetables are tender. Meanwhile, cook rice according to package directions. , Divide rice among 6 soup bowls, 3/4 cup in each; top each with 1 cup soup. Garnish with chive blossoms if desired.

- Combine vegetables and 3 tablespoons water in large nonstick skillet. Cover and cook over medium-high heat 4 minutes or until crisp-tender. Remove and drain.

I love any kind of Asian style food, especially stir-fries because they are so tasty, and easy to cook. Also they help incorporate more veggies into my diet which I often lack! Love, love, love this stuff!

Steps:
- 1. Trim excess fat from steak. Partially freeze steak and slice diagonally across the grain into 2x1/4" strips. set aside.
- 2. Combine soy sauce, garlic, sugar and ginger; add steak, tossing to coat. Cover and refrigerate 1 hour.
- 3. Coat wok with peanut oil; allow to heat to medium high for one minute. Add steak; stir-fry 2 minutes. Add mushrooms, green onions, waterchesnuts, stir-fry 2 minutes.
- 4. Add other vegetables and stir-fry for 2 minutes.
- 5. Dissolve soup base and cornstarch into water; stir into steak mixture. Cook just until thickened. Sprinkle green onions over the top and serve over rice.

QUICK ASIAN BEEF, VEGETABLE & NOODLE SOUP
This is a flavorful soup that is quick and easy to put together. It is from the Iowa Beef Industry Council. The recipe originally called for using two seasoning packets from the ramen noodles, but we thought it was too strong and salty, I recommend using one to start then adding more to taste.

- Remove seasoning packets from ramen noodles; set aside.
- Combine broth, water, vinegar, soy sauce, ginger, garlic and vegetables in stockpot. Bring to boil.
