AUNT GRACE'S RUM CAKE

I always knew it was something special when mom would make this. Around the holidays or when family was coming for a visit. When we were little we thought we were being so naughty because of the rum. Tons of good memories with this one.

Aunt Grace's Rum Cake image

Steps:

  • 1. Cream together butter and sugar, add eggs one at a time, beating well after each egg.
  • 2. Add buttermilk alternately with dry ingredients.
  • 3. Bake in slow oven 325 degrees for 1 hour (may take longer depending on your oven)in well greased & floured bundt pan.
  • 4. Let cake cool slightly before turning out of the pan. Use pastry brush to apply glaze to slightly warm cake.

3 c sifted flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
SIFT THESE 4 INGREDIENTS TOGETHER--2 TIMES
1/2 c butter
4 eggs
2 tsp vanilla
2 c sugar
1 c buttermilk
2 tsp rum extract
RUM CAKE GLAZE
1 c sugar
1/4 c water
1/2 c butter
BRING TO BOIL- LET COOL TO WARM
WHEN WARM ADD THESE:
1 tsp vanilla
1 tsp rum extract

This is an easy recipe for a rum-soaked cake filled with walnuts and a rum glaze.

Easy Rum Cake image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube or Bundt pan. Sprinkle nuts over the bottom of the pan.
  • Mix together the cake mix, 1/2 cup dark rum, eggs, 1/2 cup water, oil, and vanilla pudding mix. Pour batter over the nuts in the pan.
  • Bake for 1 hour. Cool, and invert cake on a serving plate. Prick the top of the cake.
  • To Make The Glaze: Melt the butter in a saucepan. Stir in 1/8 cup water and the 1/2 cup sugar. Boil for 5 minutes, stirring constantly. Remove glaze from heat, and stir in 1/4 cup rum. Drizzle and smooth evenly over the top and sides.

MOM'S FAMOUS RUM CAKE

This classic rum cake recipe, built around a yellow cake mix, is a favorite of mushers and snowmobilers passing through the village of Tanana, Alaska, in the wintertime. It's hard to mess up, comes together quickly, fills out a (prepared) Bundt pan reliably and can be made on a whim with ingredients from the pantry. It travels well; keeps, covered, for several days; and pairs nicely with coffee and cold weather.

Mom's Famous Rum Cake image

Steps:

  • Heat oven to 350 degrees. Grease a 9-inch Bundt cake pan, scatter the nuts evenly into the bottom of the pan, and set aside.
  • In a large bowl, whisk together the cake mix, pudding mix, eggs, water, oil and rum. Pour the batter into the prepared pan and bake for 40 to 45 minutes, or until a skewer inserted into the thickest part of the cake comes out with just a few crumbs attached.
  • While the cake bakes, make the glaze: In a small saucepan, combine the butter, sugar, rum and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat to a simmer and cook for 5 minutes, then remove from heat.
  • When the cake is done, remove from the oven and let cool 5 minutes, then invert onto a serving plate. Using a skewer or a fork, poke holes all over the top and sides of the cake, then brush the entire cake with the glaze, repeating until all the glaze is gone. Serve warm or at room temperature. Cake keeps (and improves, some say), wrapped and refrigerated, up to 3 days.

My Aunt Louise in Tennessee shared this recipe with me, it has been a dear family favorite for years. This is a VERY moist, sweet, sticky, and EASY to make crowd pleasing dessert! This cake is so cherished in our home, that it has its very own Fleur-de-lis Bundt Pan!

Aunt Lou's Butter Rum Cake image

Steps:

  • FOR CAKE: Mix all ingredients well and pour into a greased and floured tube or bundt pan.
  • Bake @ 350 for 45 to 50 minutes.
  • Let stand for about 30 minutes to cool.
  • FOR SAUCE: Put all ingredients except flavoring in a saucepan and bring to a boil.
  • Cook until butter is just melted and sugar is dissolved.
  • Add flavoring and pour hot sauce over cake.
  • Let stand 30 minutes and turn out of pan.
  • Try to bake a day ahead of time.
  • I serve with rum infused whipped cream or Crème Fraîche.
  • Freezes well.
  • Note: You can use a lemon cake mix and lemon flavoring for a GREAT lemon cake (I like to add poppy seeds to). I serve with Lemon Curd.

Steps:

  • In a large bowl, combine 1 cup flour, sugar, yeast and salt. In a small saucepan, heat the butter, milk and water to 120°-130°. Gradually add to dry ingredients; beat on medium speed for 3 minutes. Add eggs, egg yolk and 3/4 cup flour; beat on high for 2 minutes., Stir in the fruit and enough remaining flour to form a soft dough (dough will be sticky). Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1-1/2 hours., Stir dough down. Cover with plastic wrap and refrigerate overnight., Punch dough down; turn onto a lightly floured surface. Shape dough into 24 balls and place in well-greased muffin cups. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, bring water and sugar to a boil over medium heat. Cook and stir until sugar is dissolved and mixture is syrupy, about 10 minutes. Remove from the heat and cool to room temperature. Stir in rum., Bake cakes at 375° for 10-14 minutes or until golden brown. Poke holes in cakes with a fork; slowly pour 1 tablespoon rum syrup over each cake. Top each with a cherry half. Let stand for 10 minutes before removing from pans. Serve warm.

I lose this so often I'm "archiving" it here. It just isn't Christmas without gaining 5 pounds with this cake. But it's sooooo worth it! Note that I don't make this according to recipe. I add a healthy slosh of REAL rum into the batter as well as top this with extra sprinkling of sugar to achieve a wonderful crusty top.
