Steps:
- Cut enough water chestnut slices in half to make 60 pieces; set aside. Save remaining water chestnuts slices for another use., In a large bowl, combine the next 10 ingredients. Crumble turkey over mixture and mix well. Divide into 60 portions and shape each portion around a water chestnut piece., Preheat oven to 350°. In a large nonstick skillet, saute meatballs in oil in batches 5 minutes or until browned. Transfer to a 13x9-in. baking dish., Cover and bake 10-15 minutes or until meat is no longer pink; drain. Serve with plum sauce.

Steps:
- Combine first 5 ingredients (ground beef through onion).
- In a large bowl; shape mixture into 30 1& 1/2" meatballs.
- Combine ketchup, brown sugar, lemon juice and sauces in an electric slow cooker; gently stir in meatballs.
- Cover with lid; cook on low setting 8-10 hours.

- Preheat an oven to 350 degrees F (175 degrees C).
- Beat the eggs in a mixing bowl. Add the onion, beef, milk, and salt; mix well. Sprinkle in the cracker crumbs and mix until evenly combined. Form the mixture into 40 meatballs and place into a 9x13 inch baking dish; set aside. Whisk the ketchup, mustard, vinegar, and sugar in a bowl; pour over the meatballs.
- Bake in the preheated oven until the meatballs are no longer pink in the center, about 1 hour.

AUNT CHRIS'S MEATBALLS
Steps:
- mix chopmeat, eggs,pesto & grated cheese in large bowl. Put milk in sauce pan on the stove and bring to low boil,remove from stove and stir in bread crumbs.Breadcrumbs should be moist and milk fully absorbed. mix breadcrumbs into meat mixture and mix by hand until completly combined. heat oil in frying pan on stove pot. Start making balls out of meat mixture. When oil is hot, put meatballs in oil, turning occasionally. Makes about 16-20 meatballs depending on size. I then add what ever the kids don't eat to my sauce. But thats another receipe.
MARY'S BAKED ITALIAN MEATBALLS
Buttermilk is the surprising secret for these flavorful meatballs! This is an adaptation from Cook's Illustrated's Pasta book. These are juicy and tender but lean, and ready to plop into your favorite sauce.

Steps:
- In a food processor, mince garlic.
- Add onion, and pulse to chop.
- Add bread slices, crumbled, and pulse to shred.
- Add buttermilk, pulse, and let stand until liquid is absorbed.
- Add red pepper flakes, salt, Parmesan cheese, egg, parlsey and pepper, and pulse to mix.
- Add ground beef, pulse till thoroughly mixed.
- Form into meatballs 1-1/2 to 2 inches in diameter.
- They will be soft (it makes about 20 meatballs or so).
- Place on a foil-lined 10 x 15 jelly roll pan.
- Bake at 400 degrees for about 20 minutes.
