AUNT ELAINE'S SWISS CHEESE & OLIVE DELIGHTS

This appetizer recipe came from my Aunt Elaine who lives in Newport Beach, California and I've been making it for years. These cheesy bite size munchies have been a home run for my family and is always a requested appetizer for any of our special events including Football season. Aunt Elaine's Swiss Cheese & Olive Delights image

Steps:

  • 1. Cut each of the english muffins in half. Place each half on a cookie sheet and broil until brown, set aside
  • 2. Add the rest of the ingredients. use enough mayonnaise to hold cheese mixture together.
  • 3. Spread generous amount on each half and broil again until brown. Cool.
  • 4. Once cooled, cut each round in quarters. I find the best way to cut is to use a pizza cutter and roll across to quarter. It seems to be less messy than using a knife.
  • 5. Serve on a platter. So Yummy!

1 pkg english muffins, halved
1 pkg swiss cheese, grated
1/2 c mayonnaise
1 can(s) black olives, chopped
salt and pepper to taste
(you can add crushed garlic and chopped green onion if you like)

HOT CHEESE OLIVES

This is classic 1950s cocktail fare that, unlike the savory gelées and boiled ham canapés that are best forgotten, we still want to eat today. Just wrap cocktail olives in a simple Cheddar dough and bake until golden. Martini optional.

Hot Cheese Olives image

Steps:

  • Heat the oven to 350 degrees. Beat the butter until creamy in a large mixing bowl, add the cheese and mix well. Stir in the flour, salt, cayenne and the Worcestershire and mix until smooth. Beat the egg with 2 tablespoons cold water. Add to the dough and mix just until incorporated. Refrigerate for 30 minutes.
  • Remove the dough and flatten out a piece about the size of a walnut into a thin round. Place an olive on top and shape it around the olive, pinching to repair any breaks. Place it on an ungreased cookie sheet. Repeat with the remaining dough and olives. Bake until the dough sets, about 15 minutes. Serve hot.

My Husband's Favorite Grilled Cheese & Green Olive Sandwich image

Steps:

  • Heat a small non-stick pan over medium heat.
  • Add olive oil and olives, and saute just until lightly browned.
  • Remove olives, temporarily, to your serving plate.
  • Add a bit more olive oil to pan, if needed.
  • Place one slice bread in pan, cover with olives, then with cheese slices, and lastly the other slice of bread.
  • Cook over medium heat until the bread is browned and crispy, pressing down with spatula.
  • Turn and brown on other side, until crispy brown and the cheese is all melty and just starting to ooze out onto the pan.

2 slices American cheese (or your favorite)

AUNT ELAINES ITALIAN ANISE COOKIES

When I first tasted these cookies I was in love, then I found out they were made from riccota cheese. I am not a big fan of any desserts made with cheese, but you cannot even taste the ricotta in them. If you don't care for anise flavoring they can be made with any other flavor you choose.

Steps:

  • 1. Cream margarine, sugar, egg and ricotta. Add anise and mix well. Gradually add dry ingredients. Mix well. Refrigerate until easy to handle and roll into balls.
  • 2. Roll into balls and bake on cookie sheet for 15 minutes at 350 degrees.
  • 3. Allow to cool. Add glaze and sprinkles. Or tint glaze with food color and put on cookies

1/4 lb margarine
3/4 c sugar
1 c ricotta cheese
1 egg
1 tsp anise flavor
2 c flour
1/2 tsp baking soda
less than 1/2 teaspoon salt
GLAZE: CONFECTIONERS SUGAR, ANISE FLAVORING AND MILK
