AUNT RO'S BAKED BEANS
This is my Aunt Ro's recipe for baked beans. It's closer to chili than baked beans, and it's great for a potluck or BBQ.

Steps:
- Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
- Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
- Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.

MAPLE BAKED BEANS
Steps:
- Place the beans in a large bowl and cover with cold water by 1-inch and cover with plastic wrap. Refrigerate overnight. Drain and rinse the beans and then drain again.
- Place the beans in large pot with 2 quarts water, the onion, bay leaf, and peppercorns. Bring to a boil, then lower the heat and simmer for about 50 minutes, or until tender. A good test is to scoop up several beans in a spoon and blow on them: if the skin starts to peel off, they're done. Drain the beans, reserving the cooking liquid.
- Preheat the oven to 225 degrees F.
- In a small saucepan, whisk together the maple syrup, brown sugar, ketchup, chili paste, ginger, salt, and 1 1/2 cups of the cooking liquid, still reserving the remaining liquid. Bring to a simmer and cook over medium heat for 6 minutes.
- Transfer the beans to a medium Dutch oven or a bean pot. Push half the bacon into the beans and place the rest on the top. Pour the maple syrup sauce over the beans. Place the lid on top and bake for 6 to 8 hours. Check occasionally; if the beans are too dry, add 1/2 cup more of the cooking liquid. If you like, you can remove the lid for the last 30 minutes to thicken the sauce. Discard the bay leaf. Serve hot.
EASY BAKED BEANS

- Preheat the oven to 350 degrees F.
- Fry the bacon in a large skillet over medium-high heat until crisp. Remove the bacon from the pan, leaving the drippings, and drain it on paper towels. Crumble and set aside.
- Add the onion to the pan with the bacon drippings and saute until softened, a couple minutes. Stir in the beans, molasses, brown sugar, mustard and crumbled bacon, and mix well.
- Pour the beans into a 3-quart casserole and bake, uncovered, for about 45 minutes.
MARY'S BAKED BEANS
Steps:
- Preheat the oven to 350 degrees F.
- Add the bacon to a large skillet and fry over medium heat until browned, 8 to 10 minutes. Remove the bacon to a paper towel-lined plate and remove all but 4 tablespoons bacon fat from the skillet.
- Add the beans, ketchup, molasses, brown sugar, dry mustard and onions to an 8-by-8-inch casserole dish. Add in the bacon fat from the skillet. Lay the reserved bacon strips on top of the bean mixture. Bake until heated through, 30 to 45 minutes.

My aunt has been bringing these beans to cookouts for as long as I can remember. She finally parted with the recipe. I was surprised at the ease. They bake up so good.

- Brown ground beef. Set on paper towel lined plate to drain.
- Brown bacon pieces.
- Sautee the onion and garlic in bacon drippings.
- Mix together the brown sugar, ketchup, molasses, and dry mustard in a big aluminum pan.
- Add the beans, ground beef and bacon pieces.
- Bake at 350 degrees for 1 hour.
- You can adjust the amount of ketchup to your taste. I use between 3/4 and 1 cup.

- Fry bacon until crisp; cool and crumble.
- Sauté onion in the bacon drippings.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer beef to a bowl with a slotted spoon. Drain and discard grease.
- Place bacon in the same skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Discard all drippings.
- Add baked beans, kidney beans, butter beans, onion, brown sugar, white sugar, ketchup, molasses, and dry mustard to the beef. Add bacon and mix all ingredients together. Transfer to a 9x13-inch aluminum pan and cover with aluminum foil.

- Pull the bacon apart and place on top of the beans.

- Soak beans overnight,next day add cold water to cover.
- Add the tsp baking soda and stir, bring to boil and drain.
- Add hot water to cover beans, and add pork slices. Cook stove top until just tender.
- Mix sugar,salt,mustard and ginger with a small amount of water. Add to beans and stir.
- Put beans in a baking dish and arrange pork slices on top of beans. Bake at 350 degrees (175 C.) until thickened and beans are done, but not mushy, about 2 hours. Stir and add water if needed.
