AUNT ELEANOR'S POTATO SALAD

Aunt Eleanor's Potato Salad image

Steps:

  • In a large saucepan of cold water add potatoes. Bring to a boil and cook just until tender. Drain and cool. Cut potatoes into 1-inch pieces. In a separate pan add eggs to cold water and bring to a boil. Simmer for about 10 minutes. Drain and cool eggs under cold running water. Peel eggs and mash with a fork. Add mayonnaise, mustard, celery, pickle or relish and vinegar. Stir well to combine. Pour dressing over potatoes and toss to coat. Season to taste with paprika and salt. Refrigerate until cool before serving.

2 pounds red potatoes, scrubbed well
2 eggs
1/2 cup mayonnaise
3 tablespoons grainy mustard
3 stalks celery, chopped
1 pickle, finely chopped or 2 tablespoons pickle relish
2 tablespoons white vinegar
Paprika
Salt

Michelle's Oriental Salad image

Steps:

  • Bring to boil the sugar, vinegar, oil, water.
  • Once the above liquids boil then add the spice packets the oriental work the best.
  • Now Boil the noodles in another pan then drain noodles.
  • In a large bowl combine the noodles, the onion and broccoli slaw, nuts and seeds, and the liquid. Its better if you let this set for at least 3 hours but it can be eatten immediately.

1 pound(s) broccoli slaw
2 package(s) ramen noodles ( i prefer the oriental or beef )
2 cup(s) chopped nuts ( normally i use slivered almonds )
1 bunch(es) green onion
1/2 cup(s) sugar
1/3 cup(s) apple cider vinegar
1/2 cup(s) olive oil
1/2 cup(s) water
1 cup(s) sunflower seeds

AUNT ISSE'S SALAD DRESSING

At family gatherings, it wasn't complete without my aunt's macaroni salad made with this delicious dressing. It provides a yummy alternative to the mayo or vinegar based dressings. I've also used this on potato salad and was asked to make the potato salad version for a friend's wedding reception! (Cook time is an estimate)

Aunt Isse's Salad Dressing image

Steps:

  • In saucepan, combine sugar, flour, and salt.
  • Add remaining ingredients and mix.
  • Over medium heat, cook until thickened, stirring constantly.
  • Remove from heat and cool slightly.
  • Add butter, stirring until melted and blended.
  • Stir in Miracle Whip.
  • Use this dressing on your favorite macaroni or potato salad.
  • Chill salad until ready to serve.
  • (I make my macaroni salad with shell or elbow macaroni, a small amount of onion, grated carrot, chopped celery, and sometimes, like my aunt, I add sliced green olives.).

AUNT LORRAINE'S LINGUINI SALAD

My Aunt Lorraine brought this salad to one of our Easter dinners several years ago. It was a huge hit and I made sure that she gave me a copy of the recipe. However, she wasn't very specific with the size of salad dressing bottles. Cook time = refrigerate time.

  • Mix everything together in a big mixing bowl.
  • Refrigerate for at least 4 hours before serving.
  • ~NOTE~Best when refrigerated overnight!
