Old Fashioned Molasses Thumbprint Cookies image

Steps:

  • 1. Heat oven to 375^. Combine oil, molasses, egg and sugar in a large mixer bowl. Beat well to combine on medium speed.
  • 2. Blend together 2 cups of flour and remaining ingredients, then add slowly a little at a time to the molasses mixture. If more flour is needed in order to roll into balls add and mix in now.
  • 3. Roll in balls and place on lightly sprayed cookie sheets. Press down with bottom of a glass dipped in granulated sugar then make a small depression in the center of each cookie with a honey spool or your thumb.
  • 4. Fill cookie depression with jam of choice -I like raspberry . Bake in a 350^ oven for 8-10 minutes. Leave cookies on sheet for 1 minute until set. Remove to wire rack or paper to cool completely.

2 tsp baking soda
1/2 tsp each cloves and ginger
1 tsp each of cinnamon,allspice and nutmeg
1/2 tsp salt
3/4 c brown sugar, firmly packed
2 - 2 1/2 c all purpose flour
garnishes granulated sugar and raspberry jam

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Toss raisins and 1 teaspoon flour together in a saucepan until raisins are coated in flour. Stir 1/4 cup sugar, 1 teaspoon vanilla extract, and lemon juice into raisins. Pour 1 cup boiling water over raisin mixture; bring mixture to a boil. Cook, stirring constantly, until raisins start to break down and mixture thickens, 5 to 10 minutes. Remove from heat and cool to room temperature.
  • Stir 2 3/4 cups flour, 3/4 cup sugar, and salt together in a bowl.
  • Whisk melted shortening and molasses together in another bowl; stir in remaining vanilla extract. Dissolve baking soda in 1/3 cup boiling water. Stir soda water into molasses mixture until mixture foams and is well-combined. Stir flour mixture and molasses mixture together in a large bowl until a stiff dough forms.
  • Divide dough into 2 balls; 1 dough ball for the bottom cookie rounds and 1 ball for the top cookie rounds. Cover 1 dough ball with a damp paper towel; roll remaining dough ball out to 1/8-inch thickness. Cut dough into rounds using the top of a glass or a round cookie cutter. Place these bottom rounds 2-inches apart on a baking sheet. Top each dough round with 1 tablespoon of raisin filling mixture.
  • Roll out remaining dough ball to 1/8-inch thickness and cut into rounds using the same cutter. Moisten fingers slightly with water and carefully work each top round from the center outwards until each is about 1/4-inch larger around than the bottom round. Working from one edge, place top round over bottom round and filling, pressing firmly to seal the cookie. Lightly press down tops of cookies to settle filling in the pocket.
  • Bake in the preheated oven until cookie is set, 10 to 12 minutes. Cool briefly on the baking sheet before transferring to a wire rack to cool completely.

SOFT MOLASSES COOKIES

I've tried a lot of molasses cookies since I was a girl on the farm, and as far as I'm concerned, these are simply the best. To keep them soft and chewy, store in a tightly covered container along with a slice of raw apple. These cookies freeze beautifully, too...if you can keep them away from "snitchers" long enough to get them in the freezer!

  • In a large mixing bowl, cream together butter, shortening and sugar until light-colored and fluffy. Beat in molasses and eggs; set mixture aside. In another large bowl, combine flour (no need to sift), salt, baking soda, ginger, cloves and cinnamon. Blend thoroughly with wire whisk. Gradually mix flour mixture into creamed ingredients until dough is blended and smooth. Roll dough into 1-1/2-in. balls. Dip tops in granulated sugar; place 2-1/2 in. apart on greased baking sheet. Bake at 350° for 11 minutes. Do not overbake. Cool on wire rack. Store in tightly covered container to maintain softness.

Julia Child's Aunt Helen's Fluffy Pumpkin Pie image

Steps:

  • Heat oven to 450 degrees and place rack in center of oven. Separate eggs and set aside.
  • Using a mixer, blender or large bowl, blend pumpkin, the 2 cups of the sugars, 1 teaspoon salt, molasses, bourbon or rum (if using), cinnamon, ginger, nutmeg, cloves, egg yolks, cream and milk until smooth. Add more milk, a tablespoon at a time, if the mixture is stiff: it should be a soft purée.
  • In a clean bowl, whip egg whites until foaming. Whip in a pinch of salt, then gradually whip in remaining 2 tablespoons sugar until shiny white peaks form. Beat 1/4 of the whites thoroughly into pumpkin mixture; gently fold in the rest.
  • Immediately ladle filling into the shells, filling to just below the rim of the pan. Place in oven and bake just until rim of crust begins to turn gold, 10 to 15 minutes. Reduce heat to 375 and bake another 25 to 30 minutes, until a tester inserted into the filling 2 inches from the rim comes out clean. (The center should still be a bit wet; it will cook more as it cools.) If the rim of the crust starts to get too brown, cover it with aluminum foil.
  • Immediately turn oven off, leave door ajar (stick in a wooden spoon to hold it open if necessary) and let sit 20 to 30 minutes more as the oven cools; this will prevent the filling from turning watery. Serve warm, or let cool, wrap tightly and refrigerate for up to 2 days. Let pie come to room temperature before serving.

  • In a large bowl Cream butter and sugar until light and fluffy.
  • Blend in the molasses and egg, beating well.
  • In another bowl, combine the flour, ginger, cinnamon, allspice and cloves.
  • Dissolve baking soda in the water.
  • Next, add the flour and baking soda mixtures alternately to butter mixture.
  • Blending well after each addition.

Steps:

  • Cream the sugar and shortening together.
  • Add two beaten eggs. Blend well.
  • Add the ginger, cinnamon and salt. Blend.
  • Add the molasses. Blend well.
  • Dissolve the 2 teaspoons of baking soda in 1/2 cup of hot water.
  • When it is just warm add it to the other preparation. Smooth it all.
  • Add the flour incrementally until the mixture is right for making drop cookies.
  • Drop from a teaspoon onto a greased cookie sheet. One teaspoon of cookie mix makes a 3" cookie.
  • Bake 8 - 9 minutes at 350°F.
  • Leave cookies on the pan a little bit before removing.
  • Rest the dough in the refrigerator between batches.

Steps:

  • 1. Cream the sugar and butter together. Add the molasses and drop the eggs in one at a time beating well after each one.
  • 2. Add the vinegar and beat until foamy and light.
  • 3. Add in sifted dry ingredients. Mixture should be stiff enough to handle. Roll 1/4 inch thick on a well floured board and cut into large cookies (I use a cookie dropper I found at Pampered Chef) You can also use cookie cutters.
  • 4. If you like, you can sprinkle them with sugar (or can just leave them as is) and bake on a greased cookie sheet 12 _15 minutes in a preheated oven (375 degrees)
