PAT'S BAKED BEANS

My step mom gave me this tasty recipe when I was lamenting over what to bring to a barbecue. I've taken this dish to several parties and there's NEVER been any left over!

Pat's Baked Beans image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving 2 tablespoons of drippings, crumble and set aside in a large bowl. Cook the onion and garlic in the reserved drippings until onion is tender; drain excess grease and transfer to the bowl with the bacon.
  • To the bacon and onions add pinto beans, northern beans, baked beans, kidney beans and garbanzo beans. Stir in ketchup, molasses, brown sugar, Worcestershire sauce, mustard and black pepper. Mix well and transfer to a 9x12 inch casserole dish.
  • Cover and bake in preheated oven for 1 hour.

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir hamburger and bacon together in the hot skillet until hamburger is browned and crumbly, 7 to 10 minutes.
  • Stir cooked hamburger and bacon, baked beans with pork, kidney beans, lima beans, onions, ketchup, brown sugar, and mustard together in the bottom of your slow cooker.
  • Cook on Low until hot and thickened, at least 3 hours.

  • Cook bacon until crisp and crumble.
  • Brown ground chuck with onions and peppers and drain.
  • Mix all ingredients well and bake in a 350 degree oven for about 30 minutes or until heated through.

Cowboy's Pinto Beans image

Steps:

  • Spray a 1 1/2-quart casserole dish with cooking spray.
  • Cook bacon until just crisp, pat with paper towels, and crumble. Reserve 2 tablespoons of bacon grease.
  • In reserved bacon grease, sauté onion and garlic until tender, about 10 minutes.
  • Put undrained pinto beans, onions and garlic, bacon pieces, and rest of ingredients into the casserole dish and mix well.
  • Bake, uncovered, in a preheated 350°F oven for 1 hour.

Mom's Baked Cowboy Beans image

Steps:

  • Preheat oven 350 degrees.
  • In a saucepan brown the hamburger meat and the onion. Drain set aside.
  • In a Pam sprayed casserole dish add the beans, ketchup, mustard, and brown sugar mixing well.
  • Add the browned meat mixture to the bean mixture and stir mixing well.
  • Cook beans until throughly hot maybe 15 minutes then add the velveeta cheese on top put back into stove until cheese is melted.
  • Take out and stir.
  • Enjoy!
  • I had to really guess on measurements and cooking times because with this recipe I never measure exact amount. I know that I use way more Velveeta Cheese. I guess you can play with the recipe until you find your personal likings.

SOUTHWESTERN COWBOY BEANS

This is a dish that is great for those days when it is just a lot of work to cook. Can be prepared ahead and frozen or simply prepared and eaten. My father taught me how to do this as a child and he loved to eat it and make it. It is a great recipe for those that love the outdoors and really would rather not have to make a huge dinner after a hike! I love it because it is filling, has a lovely southwestern flavor - old southwest, and because it is a wonderful protein, iron and potassium meal! *Note, if the beans are not completely crushable (pressed between fingers and mashed completely) they will not taste good. When sorting, do not put in beans that have been broken in half or have any kind of serious flaw. This will make your beans bitter. Make sure that you do not add too much water or too little as it will make it watery or burn.

Steps:

  • Sort, wash and soak beans over night.
  • In a large pot, add all ingredients in no particular order. Breaking up the meat into smaller pieces.
  • Add water and cook at a medium temperature.
  • Cover, allow to cook 2 - 4 hours depending on the amount cooked, until beans can be pressed between your fingers.

  • Preheat the oven to 350 degrees F (175 degrees C).
