AUNT RO'S BAKED BEANS

This is my Aunt Ro's recipe for baked beans. It's closer to chili than baked beans, and it's great for a potluck or BBQ.

Steps:

  • Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
  • Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
  • Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the bacon to a large skillet and fry over medium heat until browned, 8 to 10 minutes. Remove the bacon to a paper towel-lined plate and remove all but 4 tablespoons bacon fat from the skillet.
  • Add the beans, ketchup, molasses, brown sugar, dry mustard and onions to an 8-by-8-inch casserole dish. Add in the bacon fat from the skillet. Lay the reserved bacon strips on top of the bean mixture. Bake until heated through, 30 to 45 minutes.

6 strips thick-cut bacon
Three 16-ounce cans regular pork and beans
1/2 cup ketchup
1/4 cup molasses
1/4 cup brown sugar
2 tablespoons dry mustard
1/2 medium onion, diced

Steps:

  • Fry bacon until crisp; cool and crumble.
  • Sauté onion in the bacon drippings.
  • In a large bowl, combine the pork and beans, bacon, ketchup, mustard, Worcestershire sauce, sautéed onion and brown sugar and mix well.
  • Pour into a large casserole dish and bake for 1 hour at 300°F.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer beef to a bowl with a slotted spoon. Drain and discard grease.
  • Place bacon in the same skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Discard all drippings.
  • Add baked beans, kidney beans, butter beans, onion, brown sugar, white sugar, ketchup, molasses, and dry mustard to the beef. Add bacon and mix all ingredients together. Transfer to a 9x13-inch aluminum pan and cover with aluminum foil.
  • Bake in the preheated oven for 50 minutes. Remove foil and bake for 10 more minutes.

GREAT AUNT VERA'S SWEET MUSTARD PICKLE

My Grandmother's sister's recipe... it's at least 70 years old. I usually hate pickle but I love this one :) Excellent use for all the home grown green tomatoes that never go red. Great on crackers w/cheese, in a cold meat sandwich etc. It does make a LOT though... but you shouldn't have a problem giving it as gifts tc.. Our family and friends are always coming back for more:) This makes at least 19 LARGE jars.. so I'd recommend cutting the recipe down to 1/4 if you want to make this the first time..)

Great Aunt Vera's Sweet Mustard Pickle image

Steps:

  • Cut up vegetables, add the salt, cover with cold water and leave to stand overnight.
  • Pour off the liquid next morning, put vegetables in to big pan (or several as necessary) and cover with vinegar.
  • Add sugar and cook until soft.
  • Mix the flour, mustard, turmeric, curry and mix to a smooth paste with some cold vinegar.
  • Remove main mixture from heat and add paste in stages VERY carefully to the main mixture (too much too quick and it will become lumpy) Stir well and boil for 5 minutes.
  • Bottle in screw-top jars.
  • Refrigerated, this stuff keeps for months and months.
  • Note: This makes at least 19 large jars, so I'd highly recommend doing a 1/2 or 1/4 recipe first!

St. James Baked Beans image

Steps:

  • Heat oven to 325 degrees. Butter a 1 1/2 quart casserole. In a small skillet, saute the bacon and onions until the bacon is crisp and onions are lightly browned; drain well. Aunt Nell's Baked Beans image

Steps:

  • Pam a baking dish. Open can of pork and beans and both cans of white beans, pour into baking dish. Add the tomato soup, brown sugar and the mustard to the bean mixture. Mix well, making sure there are no lumps of brown sugar. Chop the onion to desired pieces and add to the bean mixture, mix well. Layer the uncooked bacon on top of the beans. Bake in an oven at 350 degrees for two hours. Turn oven off and let sit in oven overnight. (This is what the recipe says to do.) Or cool and refrigerate. Reheat the next day and enjoy.
