AUTHENTIC BAKED ZITI WITH MEAT SAUCE, EGG AND PEAS

This is my family's absolute favorite recipe I make. I usually make this every Sunday after church. It does take a bit of time to make if you make the sauce the same day, otherwise you can make the sauce ahead of time - a few days prior to making this recipe. This is a very flavorful, cheesy dish and it is most certainly not low...

Authentic Baked Ziti with Meat Sauce, Egg and Peas image

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a large glass casserole pan, pour about 1 cup of sauce on the bottom of the pan. Drizzle a small amount of olive oil into the bottom over sauce.
  • 3. In a large glass bowl, add pasta and 5 cups sauce. Toss, adding more sauce as needed. I usually add about 6 cups or more.
  • 4. Add cooked peas and eggs, toss.
  • 5. Add about 3/4 cup parmesano reggiano cheese, reserving the remaining 1/4 cup for top. Add 3/4 lb of mozarella, also reserving the remainder of the cheese for the top. Stir to mix.
  • 6. Spoon pasta mixture into pan, and sprinkle dried basil or italian seasoning over the top. Sprinkle with both remaining cheeses.
  • 7. Cover with foil, shiny side up. Seal around the edges to lock in steam. Bake about 35 minutes and then remove foil. Allow to bake another 5-10 minutes uncovered and remove to cool.
  • 8. When cooled, serve alongside a salad if desired. Enjoy!

1 box rigatoni pasta, halfway cooked and drained
1 c parmesano reggiano cheese
1 lb mozarella, grated
1 tsp dried basil or italian seasoning
1/2 c frozen green peas, cooked
3 lg boiled eggs, peeled and sliced

Mamma Maria's Baked Ziti (Pasta al Forno) image

Steps:

  • 1. Start by making the sauce. In a big pot, heat oil. Add onions and cook until lightly browned.
  • 2. Add tomato puree.
  • 3. Use an empty sauce can and fill with water add to the sauce.
  • 4. Cook sauce in medium heat for 10 minutes or so then add sugar, basil and stir, continue to cook the sauce for another 30 minutes stirring occasionally.
  • 5. Preheat oven at 375 degrees F. Brown ground beef and drain fat.
  • 6. Chop boiled eggs.
  • 7. Cook pasta as directed; make it a little al dente. Drain pasta and put it back in the pot.
  • 8. Add ground beef and peas to the sauce.
  • 9. Pour enough sauce to lightly coat the pasta. Make sure you divide the sauce so you can have enough for the baking preparation.
  • 10. In a 13x9 pan, pour a scoop of sauce and spread it all around the pan.
  • 11. Add half of the pasta. Layer the eggs on top of every section of the pasta.
  • 12. Then with a teaspoon, layer the ricotta on every section of the pasta until the whole cup is gone.
  • 13. Add half the sauce on top.
  • 14. Then sprinkle half of the grated Parmesan cheese and a half bag of mozzarella.
  • 15. Pour the remaining pasta on top and add the sauce.
  • 16. Top grated cheese and mozzarella. Cover loosely with aluminum foil and cook for about 30 to 40 minutes or until golden brown and bubbly. Remove the foil for the last 10 minutes to allow to slightly brown. Mom used to let it sit for about 10 minutes so when you would cut portions they wouldn't fall apart.
  • 17. You can choose whatever item you like in the ziti... but we love it just like that... it's filling and it's good.

2 lb ziti, cooked
3 eggs, hard boiled
1 lb ground beef
1 can(s) peas, 15 oz.
1 pkg shredded mozzarella, 16 oz.
1 c Parmesan cheese
1 c ricotta cheese
INGREDIENTS FOR MOM'S SAUCE
1 can(s) tomato puree, 28 oz.
4 Tbsp sugar
2-3 sprig(s) basil, fresh
1 small onion, sliced thin
1 1/2 Tbsp olive oil or vegetable oil
1 can(s) water (empty puree can)

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the spaghetti sauce, tomatoes, tomato paste, water, parsley, Worcestershire sauce, basil and 1/2 teaspoon oregano. Cover and simmer for 3 hours, stirring occasionally. , Cook pasta according to package directions; drain. In a large bowl, combine the ricotta, mozzarella, 2 tablespoons Parmesan, egg, salt and pepper., Spread 1 cup meat sauce into a greased 13x9-in. baking dish. Layer with half of the pasta, a third of the meat sauce and half of the cheese mixture. Repeat layers. Top with remaining sauce. Sprinkle with remaining Parmesan and oregano. , Cover and bake at 350° for 1 hour or until heated through.

AUTHENTIC BAKED ZITI

Baked Ziti is a wonderful dish all its own. When done correctly, it is actually very different from lasagna. If you get good ingredients and follow this recipe, you will end up with a delicious and unique authentic Italian meal that tastes like nothing you've ever had before! A word about the ingredients: fresh mozzarella cheese is not the same thing as part-skim mozarella cheese. Use fresh mozarella in this recipe. Marzano tomatoes are a must for this recipe as well, but in a pinch, Progresso whole Italian tomatoes will do. Fresh herbs can be found in the produce section of most stores, but dried herbs can be substituted.

Authentic Baked Ziti image

Steps:

  • SAUCE.
  • Remove the sausage casings and crumble the sausage.
  • Add 2 teaspoons of olive oil to a pan, and brown the sausage.
  • Puree the tomatoes in a blender (not too much).
  • Add onions and garlic to now-browned sausage. Cook for a few more minutes until transparent.
  • Add your tomato puree to the sausage.
  • Add thyme and basil to sauce.
  • Add some salt and pepper to taste.
  • Add a generous pinch of the pepper flakes.
  • Stir this up, heat to near-boil, then let it simmer covered on low for 15 minutes.
  • BUILDING THE DISH.
  • Boil your ziti pasta to not quite al-dente. Don't overboil, pasta will soften while baking.
  • Cut the mozarella, half of it into 1/2 inch cubes, the other half in as thin of slices as you can manage.
  • Remove the herb sprigs from the sauce and discard.
  • Add the can of tomato paste to your sauce to thicken it up and give it a lively red color and more intense flavor.
  • Add the pasta, your sauce, the cubed mozarella and half the parmesan in a baking dish.
  • Top with the sliced mozarella and the remainder of the parmesan.
  • Bake for about 30 minutes until golden.
