CINNAMON CHIP MUFFINS
In just 40 minutes, you can be cozying up to these sweet Cinnamon Chip Muffins and a tall glass of milk.

Steps:
- Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups.
- In medium bowl, mix flour, sugar, baking powder and salt. In small bowl, mix oil, milk, egg and vanilla. Pour into flour mixture; stir just until combined. Stir in cinnamon chips. Divide batter evenly among muffin cups.
- Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Serve warm, if desired.

- Preheat oven to 375 degrees F (190 degrees C). Grease muffin pans or line with paper muffin liners.
- In a large bowl, stir together the brown sugar, white sugar, flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger. Make a well in the center, and add the melted butter, milk and eggs, mix until smooth. Stir in the cranberries, apple, figs, and hazelnuts. Spoon the batter into the prepared muffin pans. Cups should be at least 3/4 full.
- Bake for 15 to 20 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.

AUTUMN CINNAMON CHIP MUFFINS
Seriously, this may be the BEST muffin I've ever made! I've taken two of my favorite recipes, tweaked them to make one AMAZING muffin! My adult son wanted to call these "Hot Damn These Are Good Muffins!" I think that says it all!

- 1. Preheat oven to 375 degrees F. Line a muffin pan with paper liners (trust me, you want to use the liners!)
- 2. FOR TOP HALF OF MUFFIN: In a large mixing bowl, cream together butter, sugar, salt, and cinnamon; add eggs and mix well. In a small separate bowl, combine flour, baking powder, ground flax, and cinnamon chips; add to wet ingredients and fold together just until combined. Set aside.
- 3. FOR BOTTOM HALF OF MUFFIN: In a separate mixing bowl, combine flour, ground flax, sugar, baking powder, cinnamon and salt. Make a well in center of flour mixture and add eggs, pumpkin, olive oil and vanilla; blend together until smooth.
- 4. Place a spoonful or two of pumpkin mixture into bottom of muffin liners. Top with cinnamon chip mixture until muffin cups are 2/3 to 3/4 full. In a small bowl, combine topping mixture and sprinkle over tops of muffins.
- 5. Bake in preheated oven for 24-30 minutes (depending on the size of muffin pan) or until a toothpick comes out clean. Jumbo muffins take about 30 minutes. Remove pan and allow to cool.
- 6. *** I added about 1/2c. chopped walnuts to half of the pumpkin mixture. I'm the only one that likes nuts in my house!
CINNAMON CHIP PUMPKIN MUFFINS
Cinnamon chips are a little hard to find but so worth the search. If you love pumpkin, fall spices and cinnamon you will love love love these. They're moist and the cinnamon sugar topping is just enough to put these over the top! YUM!

- 1. Preheat oven to 350 degrees. Prepare muffin tins (any size) by spraying with baking spray (Pam) and lining with paper or foil muffin papers. Mix together the first group of ingredients and then add the second group of ingredients.
- 2. Add third group of dry ingredients together and slowly add to the batter. Once all the dry ingredients have been well mixed into the batter add one package of cinnamon chips. *Note: I found Hershey's cinnamon chips at both QFC (Kroger) and Albertson's here in the Northwest.
- 3. After the chips have been stirred in well, scoop the batter into your muffin tins. This will make 12 jumbo muffins (plus a few minis) or 24 regular sized muffins. Before baking sprinkle each muffin with about a teaspoon of cinnamon sugar (less for minis) and bake at 350 degrees for 15 minutes for minis and 20-25 for regular or jumbo muffins.

- In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder, salt and nutmeg; add to creamed mixture alternately with milk until well combined. , Fill greased muffin cups half full.
