Spicy Sweet Potato Fries image

Steps:

  • Toss 2 pounds sweet potatoes (cut into wedges) with 3 tablespoons olive oil, 1 1/2 teaspoons each brown sugar and salt, 1/4 teaspoon each cumin and chili powder, and a pinch of cayenne. Roast cut-side down on a baking sheet in a 425 oven until crisp, 30 minutes, turning once.

Baked Sweet Potato

Steps:

  • Preheat the oven to 450 degrees.
  • Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.

2 medium sweet potatoes, peeled

Brown Sugar & Spice Sweet Potato Fries image

Steps:

  • 1. *You can tell if they are actual sweet potatoes because at least one end, sometimes both, will have a sharp point, (not rounded like russets.) They also usually come individually wrapped and say that they are sweet potatoes. They are very sweet compared to yams, hence their name. Hope that helps!
  • 2. Preheat oven to 425. Line a baking sheet with foil and spray well with butter-flavored cooking spray. Unwrap potatoes and rinse off with cool water. With sharp long knife, trim off woody pointed ends, then cut potatoes in half lengthwise and set cut-side down for easy and stable cutting of the rest as they are very hard and a bit difficult to cut. Continue cutting into wedges or french fries. I cut mine into about a 1/2" square around. *Baking time will depend on size so keep that in mind. Place fries onto prepared pan and drizzle with oil. Toss to coat. EVENLY sprinkle with rest of ingredients. Toss again WELL to mix and evenly disperse seasonings scootching potatoes across the surface to incorporate all of the ingredients. Spread out in a single layer with any of the skin sides facing upwards. Pop into oven and bake for 15 minutes. Remove from oven, turn each one with tongs, pop back into oven and bake another 10 minutes. Remove from oven leaving door open and turn oven down to LOW (200 degrees), loosen fries from foil a bit and pop back in until ready to serve. Mine were in there for another 10 minutes while I finished preparing other dinner items. *They can also sit out further for a bit, too, so no worries that they have to be piping hot to serve. Warm was just as good if not better!

2 medium-sized sweet potatoes, *not yams!* (unpeeled)
3 tbl. canola oil, more if needed
1 Tbl. dark brown sugar
1/2 tsp. seasoned salt, i use "johnny's"
1/2 tsp. coarse ground pepper
1/4 tsp. cinnamon
1/8 tsp. garlic powder
1/8 tsp. paprika

I found this one on wholesomebabyfood.com and posted it here for safe keeping. These fries bake up soft and delicious with the addition of cinnamon and brown sugar. The little ones can't keep their hands off of them! They are recommended for babies that are 6 months and older, but they also advise speaking to your pediatrician before starting your baby on solids. Also, remember to follow the RULE OF FOUR (wait 4 days after introducing new foods) and make sure your baby has had no allergic reactions to any of the foods in this recipe before serving it!

  • Preheat oven to 400 degrees (F).
  • Scrub sweet potatoes, clean and/or peel them if baby cannot handle the skins.
  • Cut the sweet potatoes into into strips that you may then cut down after baking.
  • In a large bowl, add about 1/4 cup of olive oil.
  • Stir in the cinnamon.
  • Toss the cut up sweet potatoes into the bowl and stir so that the potatoes are drenched with the olive oil mix.
  • Dump mixture onto a baking sheet and drizzle the remaining olive oil in the bowl over the potatoes on the baking sheet and swirl and stir them so they're all covered and the olive oil is spread out on the tray.
  • Sprinkle brown sugar over the sweet potatoes.
  • Bake for approx 30-45minutes or until tender.
  • The skins may become crispy but the actual potato "meat" will not. They will be a bit mushy like. These will not look or bake up like regular white potato French Fries so don't be alarmed.

Sweet Potato Fries with Aunt TC's Secret Sauces image

Steps:

  • For the sweet potato fries: Soak the potatoes in cold water 30 minutes. Dry on paper towels.
  • Stir together the brown sugar, garlic, paprika, salt and pepper in a small bowl.
  • For the creamy barbecue sauce: Stir together the barbecue sauce, mayonnaise and House Seasoning in a bowl.
  • For the spicy sauce: Stir together the ketchup, mayonnaise, House Seasoning and hot sauce in a separate bowl.
  • For the sweet potato fries: Pour the oil to a depth of 3 inches in a Dutch oven. Heat the oil to 325 degrees F. Line wire racks with paper towels.
  • Stir together the cornstarch and seltzer water in a medium bowl. Dip the sweet potatoes in the cornstarch mixture in batches until coated. (The coating will be thin. Stir the cornstarch mixture after each batch.) Fry the sweet potatoes, in batches, until they float to the top, 1 to 2 minutes. (The sweet potatoes won't brown yet.) Remove to lined wire racks to drain.
  • Increase the oil temperature to 350 degrees F.
  • Fry the potatoes a second time, in batches, until browned and crispy, 4 to 5 minutes. Remove to the lined racks to drain. Sprinkle immediately with the brown sugar seasoning. Serve right away with the sauces.
  • Stir together the garlic and onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.
