SPICY BROWN SUGAR BACON
Inspired by the millionaire's bacon at the restaurant Sweet Maple, these sweet, spicy, caramelized strips are perfect for a special breakfast or brunch gathering.

- Preheat the oven to 300 degrees F.
- Cut bacon lengthwise into nine 1/4- to 1/2-inch-thick slices.
- Line a baking sheet with foil and place a cooling rack into the baking sheet. Coat the cooling rack with cooking spray.
- Whisk together the sugar, cayenne, paprika, 2 teaspoons pepper and 1/2 teaspoon salt in a pie dish. Pour 1/2 cup of the maple syrup into a small bowl.
- Brush both sides of each slice of bacon with maple syrup. Press the bacon, one slice at a time, into the brown sugar mixture to coat. Arrange on the greased wire rack. Sprinkle the bacon with the leftover brown sugar mixture.
- Bake, rotating halfway through, until the bacon is cooked and the sugar is dark and caramelized, about 1 hour 30 minutes.
- Transfer the bacon to a parchment-lined baking sheet. Let cool completely. (Bacon can be stored in an airtight container at room temperature for up to 3 days.)
- Meanwhile, whisk together the red pepper flakes and remaining 1/4 cup maple syrup in a small bowl. Drizzle the bacon with the red pepper-maple syrup or serve on the side for dipping.
BACON AND BROWN SUGAR INFUSED TILAPIA
My husband says this dish reminds of him of bacon wrapped scallops. It has that savory, yet slightly sweet taste. Quick and easy to make. I initially planned to wrap the filets with the bacon, but the bacon cooked up to fast and so I just finished it in the pan with the filets.

Steps:
- Heat a medium-large sized pan to medium heat.
- Cook the slices of the bacon in the microwave to HALF done - about 3-4 minutes.
- Add your butter to the pan, melt, then add the bacon.
- Moisten your tilapia filets slightly and sprinkly or rub a some of the brown sugar on them. Add the filets to the pan, laying them on top of the bacon.
- Sprinkle the rest of the brown sugar on the other side of the tilapia, and season with salt and pepper to taste.
- Cook about 3-4 minutes.
- Flip, bacon and all to cook the other side (tilapia on bottom, bacon on top) until fish flakes and is cook through.
TILAPIA WITH BALSAMIC BROWNED BUTTER AND CREAMY FARFALLE WITH BACON, TOMATO AND PEAS

- Heat a pot of water to a boil, salt the water and cook pasta to al dente.
- Heat a deep large skillet with 1 tablespoon extra-virgin olive oil over medium-high heat. Add bacon and crisp 3 to 4 minutes. Add onions, garlic, bay leaf and mushrooms, season with salt and pepper and cook until tender but not browned, 5 minutes. Add tomatoes, crush them up with a wooden spoon and simmer 15 minutes on low heat.
- Season the fish with salt and pepper. Dust fish with flour and shake off excess.
- Heat 2 tablespoons extra-virgin olive oil in a large skillet over medium high heat. Cook fish 4 minutes on each side.
- While fish cooks, stir peas into sauce, return to bubble and stir in mascarpone cheese. Adjust seasoning.
- Remove fish from skillet to a platter and cover loosely with foil to keep warm. Reduce heat to medium and add butter to pan. Brown butter, 2 to 3 minutes, stir in balsamic and simmer 1 to 2 minutes to reduce by half. Pour the brown butter and vinegar over fish.
- Drain pasta, toss with sauce and wilt basil into pasta.
- Serve fish with pasta alongside.
