BACON BISCUIT BITES
The bacon grease added to the dough makes these biscuits sooooo flavorful! They're really light too (which means I can sneak one or two extra). These would be great for breakfast, brunch or maybe even an appetizer at a party. So good!

Steps:
- 1. Preheat oven to 450 degrees.
- 2. Fry bacon and reserve 2 tablespoons of grease.
- 3. Combine the next four ingredients.
- 4. Cut in the cold lard and butter with a pastry blender.
- 5. Mix the cheese into the dry ingredients.
- 6. Pour in the buttermilk and bacon grease.
- 7. Stir just until the dough comes together; roll out to 1" thickness and cut out the biscuits with a 2" biscuit cutter.
- 8. Bake for 10 - 12 minutes until golden brown.
- 9. Split hot biscuits; lightly butter; place 1/2 slice of crispy bacon between halves; top bacon with favorite jam or preserves; combine halves and enjoy!

- Preheat oven to 425°. Cook macaroni according to package directions; drain., Meanwhile, sprinkle 1/4 cup bread crumbs into 36 greased mini-muffin cups. In a large saucepan, melt butter over medium heat. Stir in flour and seasonings until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in 1 cup cheddar cheese and Swiss cheese until melted., Remove from heat; stir in biscuit mix, eggs and 1/2 cup bread crumbs. Add macaroni; toss to coat. Spoon about 2 tablespoons macaroni mixture into prepared mini-muffin cups; sprinkle with remaining cheddar cheese and bread crumbs., Bake 8-10 minutes or until golden brown. Cool in pans 5 minutes before serving.

- Heat oven to 425°F. Lightly spray cookie sheet with cooking spray.
- In medium bowl, stir together Bisquick mix, cheese, sugar, Italian seasoning and red pepper. Add 1/3 cup of the mayonnaise and the milk, stirring with fork until moistened. On lightly floured surface, knead dough 5 or 6 times. Pat or roll dough to 1/4-inch thickness. Cut with 1 3/4-inch round cutter; place rounds on cookie sheet.
- Bake 8 to 10 minutes or until golden brown. Cool slightly. Spread biscuits with half of remaining 1/3 cup mayonnaise; top each biscuit with tomato slice. Spread tomato slices with remaining mayonnaise; sprinkle evenly with bacon and onions.

- Preheat oven to 350°. Cut bacon strips widthwise in half; cut sausage links in half. Wrap a piece of bacon around each piece of sausage. - Heat oven to 350°F. Spray 32 nonstick mini muffin cups with cooking spray. Cut each bacon slice into 6 pieces; set aside. Cut each cheese slice crosswise into 4 strips, then cut each strip crosswise into 6 pieces for a total of 24 pieces per slice.
- Separate dough into 8 biscuits, and cut each into quarters. With serrated knife, carefully cut 3 slits into top of each biscuit piece about 1/4 inch apart, without cutting all the way through to the bottom.
- Stuff each slit with a piece of bacon and cheese, folding the bacon in half. Place assembled biscuit bites into each muffin cup, filling side up. Bake 15 to 17 minutes or until cheese is melted and biscuit dough is golden brown.
- Brush melted butter on top of baked biscuit bites. Remove from muffin cups, and serve warm with ranch dressing.
