BACON-WRAPPED POTATOES WITH HONEY-SCALLION SAUCE
I made this as a side dish with apple pork chops and fresh cooked spinach for myself and my boyfriend... We both loved it!

Steps:
- Wrap each potato wedge with 1 slice bacon. Secure each end of the bacon slice with a toothpick.
- Place potato wedges in a large saucepan. Pour in canola oil to to cover halfway. Cook over medium heat, turning occasionally, until potato wedges are tender, about 20 minutes. Increase heat to high; cook until bacon is crisp, 3 to 5 minutes more. Drain on a plate lined with paper towels.
- Mix butter, honey, green onion, parsley, salt, and pepper together in a small bowl.
- Remove toothpicks from potato wedges and transfer to a platter. Drizzle melted butter mixture on top.

Steps:
- Peel potatoes. Dice them into 1/2 inch by 1/2 inch cubes.
- Parboil them for about five minutes so they are slightly tender but not falling apart. DO NOT OVER BOIL THEM. Drain water.
- Heat oil to 350 degrees in a pan.
- Fry them to a golden brown ( about 15-20 minutes) stirring occasionally.
- Drain on paper towel.
- Mix butter, honey, scallions and bacon in a bowl.
- Add potatoes and stir. Enjoy!

BUTTERMILK-BACON SMASHED POTATOES
Steps:
- Add the potatoes to a pot and cover with water. Season with salt and bring to a boil. Once at a boil, cook until a fork can easily pierce through the potatoes, 10 to 15 minutes. Drain and add to a bowl.
- Place the bacon in a cast-iron pan over medium heat. Allow the bacon to render and crisp, about 5 minutes. Reserve the fat.
- Put the buttermilk and heavy cream into a saucepan and scald. Reserve until needed.
- Smash the potatoes just a little bit, and then season with salt and pepper. Add the butter, a touch of the heated buttermilk/heavy cream, the scallions and 1 tablespoon bacon fat and smash. Taste and re-season if needed, adding more buttermilk/heavy cream if desired. Fold in the rendered bacon, reserving some for garnish. Garnish with the reserved bacon and scallions.

- Preheat oven to 375°. Scrub sweet potatoes; pierce several times with a fork. Bake on a foil-lined baking sheet until tender, 45-60 minutes. Cool slightly., Cut a thin slice from top of each potato. Scoop out pulp, leaving 1/4-in.-thick shells. Mash pulp with butter, honey and seasonings. Stir in pear, 1/3 cup chopped bacon, 1/4 cup cheese, green onions and tarragon. Spoon into shells; return to baking sheet. Top with remaining cheese., Bake until heated through, 20-25 minutes. Sprinkle with remaining bacon.

- Bring beer to a boil in a 5- to 6-qt. pot that can hold a steamer basket snugly. Meanwhile, cut potatoes into bite-size pieces and put them in a steamer basket. When beer boils, put steamer basket of potatoes in pot, cover, reduce heat to low, and steam until potatoes are tender when they are pierced with a fork, about 15 minutes.
- Meanwhile, cook bacon in a frying pan over medium heat until crisp. Drain bacon on paper towels, chop, and set aside. Pour off fat in pan, but don't wipe out or rinse. Return pan to medium heat and add butter and onions. Cook, stirring occasionally, until onions start to brown, about 10 minutes.
- Meanwhile, put potatoes in a serving dish, reserving beer in bottom of pot. Add 3/4 cup beer and reserved bacon to onions, scraping up any browned bits from bottom of frying pan.
- Pour bacon mixture over potatoes, add pepper, and stir gently to coat. Add salt to taste. Serve hot or warm.
