BREAD MACHINE BAGELS
Quick and easy bagels you can make with your bread machine! You can use whatever topping that you wish, many like poppy seeds.

- Place water, salt, sugar, flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select Dough setting.
- When cycle is complete, let dough rest on a lightly floured surface. Meanwhile, in a large pot bring 3 quarts of water to a boil. Stir in 3 tablespoons of sugar.
- Cut dough into 9 equal pieces, and roll each piece into a small ball. Flatten balls. Poke a hole in the middle of each with your thumb. Twirl the dough on your finger or thumb to enlarge the hole, and to even out the dough around the hole. Cover bagels with a clean cloth, and let rest for 10 minutes.
- Sprinkle an ungreased baking sheet with cornmeal. Carefully transfer bagels to boiling water. Boil for 1 minute, turning half way through. Drain briefly on clean towel. Arrange boiled bagels on baking sheet. Glaze tops with egg white, and sprinkle with your choice of toppings.
- Bake in a preheated 375 degree F (190 degrees C) oven for 20 to 25 minutes, until well browned.

GLUTEN-FREE EVERYTHING BAGEL BREAD
I have had countless people tell me that missing bread is the hardest thing about sticking with a gluten-free diet. So, I set out on a quest to make a version that is satisfying when toasted for breakfast and hearty enough to be used for sandwiches. This bread is even better when it's sliced and toasted in a pan with a touch of butter or olive oil until it's lightly golden.

- For the onion topping: Heat a large saute pan over medium heat. Once the pan is nice and hot, add the coconut oil and the onions and stir frequently until translucent and fragrant, 7 to 10 minutes. Set the onions aside. Combine the poppy seeds, sesame seeds and sea salt in a small bowl.
- For the bread: Preheat the oven to 375 degrees F. Line a 9-by-5-inch nonstick loaf pan with parchment paper, leaving a 2-inch overhang on the 2 long sides of the pan. This will make it much easier to lift the bread out of the pan. Spray with cooking spray.
- In a small mixing bowl, whisk together the almond flour, baking powder, dried onion flakes, poppy seeds, toasted sesame seeds, fine salt, baking soda and caraway. Set aside.
- In the bowl of a stand mixer fitted with the whisk attachment, add the egg whites and cream of tartar (if you don't have a stand mixer an electric beater will suffice). Whisk the egg whites until stiff peaks form, about 3 minutes.
- In a large mixing bowl, whisk together the egg yolks, coconut oil and lemon juice. Add the dry ingredients to the wet egg mixture in 3 small batches, making sure to thoroughly combine the dry mixture and the egg mixture each time. The batter will look like a very thick paste. Don't worry, you haven't done anything wrong. Just make sure to break up any clumps of flour with a rubber spatula to ensure that the dry and wet ingredients are evenly incorporated.
- Add a third of the whipped egg whites to the batter and slowly fold them in. This won't be a very easy task, take your time and know that eventually they'll combine. Add another third of the egg whites and fold. Finally, add the remaining egg whites and fold together; there should not be any chunks of batter left but the batter will never completely combine (white and yellow portions will remain).
- Pour the batter into the prepared pan. Sprinkle the batter with the sauteed onions and half the seed mixture. Bake until the top is golden brown and a toothpick can be inserted in the center and comes out clean, 30 to 35 minutes.
- Let the bread cool in the pan for 10 minutes. Use a knife to release the sides and lift the bread out using the parchment paper. Cool completely, about another 30 minutes.
- For the toast: Cut yourself a 1-inch slice of bread and give it a thin coat of cream cheese. Top with a layer of crispy cucumbers, and if you feel like it, top it with some of the reserved seed mixture!
BASIC BAGEL (FOR THE BREAD MACHINE)

Steps:
- Remove dough from the machine after the first knead- approximately 20- 30 minutes.
- Place dough on floured surface.
- Divide into 8 parts.
- Form balls, gently press thumb through center of ball and slowly stretch into bagel shape.
- While bagels rise, bring 3 quarts water and 1 TBS sugar to a rapid boil in a large sauce pan.
- Drop test dough (see first success hint).
- Using slotted spoon, drop 2-3 bagels into rapidly boiling water.
- Boil on each side for 1 1/2 minutes.
- Remove and cool on rack 1 minute, brush with egg wash and sprinkle with sesame or poppy seeds, if desired.
- Bake at 400°F on a baking sheet sprinkled with cornmeal, until golden brown- approximately 15 minutes.
- Bagel Success Hints: When forming bagels, set aside two 1/4" balls of dough.
- When bagels have doubled in size, drop the test dough into boiling water.
- Dough should pop to the top right away.
- When this happens, it is time to boil the bagels.
- A quick spray of non-stick vegetable coating on the top of the bagel may be substituted for the egg wash.
- To make bagel sticks, cut bagel before rising and lay out in a straight line.
- Roll sticks in a combination of sesame and poppy seeds with a pinch of garlic powder.
- Let sticks rise, boil, and bake as described in Basic Bagel process steps above.
- To make bagel chips, slice leftover bagels horizontally into thin slices.
- Brush with butter or margarine on one side.
- Lay (butter side up) on ungreased cookie sheet and bake at 325°F for 12-15 minutes or until golden brown and crisp.

EVERYTHING BAGEL SEASONING PEASANT BREAD
For as long as I can remember, my mother has been baking her peasant bread in Pyrex bowls, the recipe for which she shared with nobody including very dear friends. When I started my blog in 2006, I knew the peasant bread recipe was off limits, so I wrote about other recipes, until I couldn't keep the secret any longer - my mother's bread was just as good as any, and it required a fraction of the work. After pleading my case for several months, my mother acquiesced, and shortly thereafter into the ether went the peasant bread recipe. The success of the peasant bread recipe led to a cookbook, "Bread Toast Crumbs," all about the peasant bread, which I wrote with my mother. I thought we had included every possible variation of the peasant bread recipe in the book, but months after it was published, a friend wrote to me telling me she had sprinkled everything bagel seasoning into her buttered Pyrex bowls before baking, and the result was extraordinary: two glistening, seed-crusted boules, the flavors of the everything bagel seasoning permeating the loaves. Brilliant! I tried the method immediately and loved the results.

- If you are using instant yeast: Whisk together the flour, salt, sugar and instant yeast in a large bowl. Add the water and mix until it is absorbed. If you are using active-dry yeast: Dissolve the sugar into the water in a small bowl. Sprinkle the yeast over top; there is no need to stir. Let it stand until the mixture is foamy, 10 to 15 minutes. Whisk together the flour and salt in a large bowl. Stir the foamy yeast mixture, then add it to the flour mixture until it is absorbed.
- Cover the bowl with a tea towel or plastic wrap and set aside in a warm spot to rise until the dough doubles in volume, 1 hour 30 minutes to 2 hours (see Cook's Note).
- Preheat the oven to 425 degrees F. Grease two 1-quart oven-safe bowls with 1 tablespoon of butter each. Sprinkle 2 tablespoons of the everything bagel seasoning or your seed mix of choice into each bowl. Turn the bowl to ensure the entire surface is coated in the seasoning. Set aside.
- Using 2 forks, release the dough from the sides of the bowl. As you release the dough from the sides, pull it towards the center. Using your 2 forks, divide the dough into 2 equal portions: eye the center of the mass of dough, and starting from the center and working out, pull the dough apart. Use the two forks again to transfer each half into your prepared bowls.
- Let the dough rise until it just crowns the rim of the bowls, about 30 minutes; depending on the time of year, this may take more or less time.
- Bake for 15 minutes. Reduce the heat to 375 degrees F and bake until the loaves are evenly golden all around, 17 to 20 minutes more. Remove the bowls from the oven and turn the loaves out onto cooling racks. Let cool for at least 20 minutes before cutting.
