Steps:

  • preheat oven to 350 degrees.
  • combine cookie crumbs, butter and 3 tablespoons bailey's in a medium bowl.
  • press evenly on bottom and up sides of 9 inch pie plate.
  • bake 3 minutes.
  • beat cream cheese, milk and remaining bailey's in a large bowl.
  • add pudding mix beat until well blended and then add cool whip.
  • spoon unto prepared crust and chill for 1-2 hours or until firm.
  • just before serving garnish with additional whipped topping that is tinted green with food coloring and/ or chocalote curls.

Baily's Irish Cream Brownie Pie image

Steps:

  • Preheat oven to 350*F.
  • Line a 9 inch pie plate with the pastry, forming a high edge. Trim and flute the edge. Chill while preparing the filling.
  • Melt the butter with the baking cocoa in a small heavy saucepan over medium low heat. Remove from heat and cool slightly.
  • Beat the eggs in a small mixing bowl at high speed until foamy. Beat in the sugar gradually in a fine stream until the eggs are thick and pale yellow coloured.
  • Reduce the speed to low. Beat in the chocolate mixture, liqueur and vanilla. Fold in the mixture of flour and salt.
  • Sprinkle the walnuts over the prepared pastry. Pour the filling over the walnuts.
  • Bake for 30 minutes or until the crust is golden brown and the filling is set. Remove to a wire rack to cool.
  • Serve with ice cream or whipped cream.

  • In a small microwave safe bowl, heat the Irish cream and espresso powder in the microwave on high power for 30-seconds. Repeat for 15-second intervals until the Irish cream is steaming, but not boiling. Add the chopped white chocolate to the hot Irish cream and set aside, stirring occasionally, until all chocolate is melted and the mixture is cooled.
  • Whip the cream until foamy. Add the powdered sugar and vanilla and beat on high until firm peaks form. Spoon into a pastry bag and pipe onto the pie or dollop in a mound. Garnish with white chocolate curls, if desired.

  • In a food processor blend Oreo cookies until crushed to a fine crumb. Pour into a bowl and mix in the melted butter until everything is combined and you have a wet sand texture. Press into a 9-inch pie dish. Cover and chill for at least 1 hour.
  • Make a make-shift double boiler by placing a heat-proof bowl on top of a saucepan filled with a small amount of water. You want the bowl to fit snuggly on top and not touch the water at the bottom of the saucepan. This is creating a steam area that will melt the chocolate slowly to prevent scorching it. Place the chocolate inside the bowl and place the saucepan over low-medium heat. Stir frequently as the chocolate melts, watch it carefully as the chocolate can go from melted to burned in a few seconds. Set aside to cool while you prepare the rest of the filling.
