FUDGY MINT SQUARES
I've had this recipe since I was in junior high school. No one can resist the fudgy brownie base, cool minty cheesecake filling and luscious chocolate glaze in these mouthwatering bars.-Heather Campbell, Lawrence, Kansas

- In a microwave, melt 8 tablespoons butter and unsweetened chocolate; stir until smooth. Cool slightly. In a small bowl, beat 2 eggs, sugar and vanilla. Beat in chocolate mixture until blended. Gradually stir in flour. , Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 15-20 minutes or until top is set. , In a large bowl, beat cream cheese and remaining butter until fluffy. Add cornstarch; beat until smooth. Gradually beat in milk and remaining egg. Beat in extract and food coloring if desired. , Pour over crust. Bake for 15-20 minutes or until center is almost set. Cool on a wire rack., In a small heavy saucepan, combine chocolate chips and cream. Cook and stir over medium heat until chips are melted. Cool for 30 minutes or until lukewarm, stirring occasionally. Pour over cream cheese layer. Chill for 2 hours or until set before cutting.

- PREHEAT oven to 350°F.
- MELT butter in 13 x 9-inch baking pan in oven; remove from oven. Sprinkle cookie crumbs over butter. Stir well; press mixture onto bottom of pan. Sprinkle with nuts and coconut. Pour sweetened condensed milk evenly over top. Sprinkle with morsels; press down slightly.
- BAKE for 20 to 25 minutes or until coconut is light golden brown. Cool completely in pan on wire rack. Cut into bars.

TRIPLE LAYER FUDGY MINT BROWNIES

- 1. Brownies - Preheat oven to 350F. Line 9×13 inch pan with foil, spray with cooking spray; set aside. Alternately, use a 9-by-9-inch pan for thicker brownies, which is my preference. I don't usually use the foil I like my glass baking dishes.
- 2. Microwave chocolate and butter in large microwaveable bowl for 90 seconds or until butter is melted. Stir until chocolate is completely melted and smooth. Stir in sugars. Stir in eggs and vanilla. If adding espresso or coffee, add it now; batter will be a bit granular and that's okay. Stir in flour until just combined, do not over mix. Pour into prepared pan.
- 3. Add the Nutella to the top of the brownie mixture and either just leave it sit on top or marble it with a knife in a zig-zag pattern.
- 4. Bake for 25 to 28 minutes, or until edges pull away from the side of the pan and top and center have just set. Keep these gooey and don't over bake; brownies will continue to firm up as they cool.
- 5. Minty Layers - In medium bowl, stir together marshmallow fluff, mint extract* (be very careful and do not use more than this unless you love mint; a little bit of mint goes a very long way), 4 drops of food coloring, or until your green is achieved.
- 6. Mix in vanilla frosting and melted white chocolate chips. Spread across the cooled brownies.
- 7. Top with crumbled mint Oreo Cookies.
TRIPLE LAYER CHOCOLATE PEPPERMINT BARS
This recipe was printed in a recent issue of the Cooking Club of America magazine. Note- Pulse 24 chocolate wafer cookies in food processor or place in plastic bag and crush with a rolling pin to make cookie crumbs. Also noted, crush peppermint candies with flat side of meat mallet; shake crushed candy in fine strainer to remove fine candy powder. Prep time is a guesstimate. Posting for safe keeping.

- Heat oven to 350 degrees. Line 8" square baking pan with foil; spray foil with cooking spray.
- To make crust - Heat chocolate mint chips and butter in medium saucepan over medium low heat until melted, stirring constantly. Remove from heat; stir in cookie crumbs. Press into bottom of pan.
- Bake 6-8 minutes or until fragrant. Cool competely on wire rack.
- To make filling - Heat 1/2 c chocolate mint chips and 1 T butter in small saucepan over medium low heat until melted, stirring constantly. Remove from heat; cool to room termperature.
- Beat remaining 1/4 c butter and cream cheese in large bowl at medium speed until smooth. Beat in 2 T cream and peppermint extract and vanilla. Reduce speed to low; beat in cooled chocolate mixture. Slowly beat in powdered sugar. Stir in remaining 1/4 c chocolate mint chips. Spread over crust; smooth top. Refrigerate 15 minutes or until set.
- To make topping - Meanwhile, place chopped chocolate in medium bowl. Bring cream to a boil in small saucepan over medium heat; pour over chocolate. Let stand 1 minute; stir until smooth. Cool at room temperature 3-5 minutes or until slightly thickened but still pourable. Spread over filling; sprinkle with peppermint candies. Refrigerate 1 hour our until set. Store in refrigerator.

- Line 9-inch square pan with foil extending over edges to form handles. Microwave 4 oz. chocolate and 5 Tbsp. of the butter in large microwavable bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted. Add crumbs; mix well. Press firmly onto bottom of prepared pan. Refrigerate 10 minutes.
- Microwave 1/3 cup water and remaining 5 Tbsp. butter in large microwavable bowl on HIGH 1 minute or until butter is melted. Add dry pudding mix; stir 2 minutes or until completely dissolved. Gradually add powdered sugar, stirring until well blended after each addition. Spread over crust. Refrigerate 15 minutes or until firm.
- Microwave remaining 4 oz. chocolate and cream in medium microwavable bowl on HIGH 2 minutes. Stir until chocolate is completely melted and mixture is well blended. Spread over pudding layer. Refrigerate 2 hours or until set. Lift out of pan onto cutting board. Cut into 24 bars to serve. Store leftover bars in refrigerator.
