CAMEMBERT WITH CRANBERRY CARAMELIZED ONIONS

Camembert with Cranberry Caramelized Onions image

Steps:

  • Heat oven to 350°F. Melt butter in large nonstick skillet over medium heat. Add onion; cook 8 to 10 minutes or until very tender, stirring frequently.
  • Meanwhile, place cheese in ungreased decorative ovenproof shallow baking dish or plate. Bake at 350°F. for 10 to 12 minutes or until cheese is soft.
  • Add cranberries, brown sugar, salt and sherry to onion; mix well. Cook 5 minutes or until sugar is dissolved, stirring frequently. Stir in marjoram; cook and stir 1 minute.
  • To serve, spoon warm onion mixture over cheese. Serve with assorted crackers and small cocktail bread slices. Store in refrigerator.

I got this recipe from my boyfriend's sister. It is absolutely amazing, and very easy to do. Spend a little bit of time preparing, and a lot of time enjoying! You can also garnish with candied walnuts.

Baked Brie with Caramelized Onions image

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Place garlic on a baking sheet, and drizzle with olive oil. Roast for 15 to 20 minutes, or until soft. Set aside.
  • Meanwhile, melt 1/4 cup butter in a skillet over medium heat. Cook and stir onion and apple in butter until tender and browned. Set aside.
  • Arrange brie on top of thawed puff pastry. Top the cheese with the apple and onion mixture. Fold puff pastry over the cheese, and pinch closed. Brush with melted butter.
  • Bake about 20 to 25 minutes, or until golden brown. Serve warm. Garnish with whole cloves of roasted garlic.

Baked Brie with Caramelized Onions image

Steps:

  • Melt butter in heavy very large skillet over medium-high heat. Add onions; sauté until just tender, about 6 minutes. Add minced thyme, reduce heat to medium and cook until onions are golden, stirring often, about 25 minutes. Add garlic and sauté 2 minutes. Add 1/4 cup wine; stir until almost all liquid evaporates, about 2 minutes. Sprinkle sugar over onions and sauté until soft and brown, about 10 minutes. Add remaining 1/4 cup wine; stir just until liquid evaporates, about 2 minutes. Season to taste with salt and pepper. Cool. (Can be prepare 2 days ahead. Cover and refrigerate.)
  • Preheat oven to 350°F. Unwrap Brie, reserving bottom of wooden box. Cut away only top rind of cheese, leaving rind on sides and bottom intact. Return Brie to box, rind side down. Place box on baking sheet. Top Brie evenly with onion mixture. Bake until cheese just melts, about 30 minutes. Transfer Brie in box to platter. Surround with baguette slices.

2 tablespoons (1/4 stick) butter

Honey-Caramelized Onions image

Steps:

  • Drain onions and place in small sauté/fry pan.
  • Add honey and butter.
  • Cook over MEDIUM heat, stirring carefully until honey and butter are completely coating onions and start to caramelize or brown. The coating should be a little bit thick and sticky, and very little moisture should remain in the pan. This should take about 15 to 20 minutes.
  • Serve in a smaller, heavy bowl with a SMALL spoon, so that by the time you get to the table there will still be some left!
  • Good with roasted poultry and pork.

Steps:

  • In a large skillet heat oil over med high heat. Add onion; cook and stir about 10 min or until onion softens and begins to brown. Season with S & P. Sprinkle onion with sugar and continue to cook 5 in more or until well browned. Stir in vinegar;simmer 1 min. Remove skillet from heat and set aside. Meanwhile, coat the bottom of the Camembert lightly with non0stick spray. Place on baking sheet bake 10 - 15 min. lightly butter 1 side of each bread slice;set aside. Remove cheese from the oven and place on a serving platter. Place bread slices, buttered side down on the same baking sheet. Bake 4 - 5 min or until golden brown. Place toasted bread on platter around cheese. Return onion mixture to med-high heat. Stir in honey and thyme. Reduce heat to med and cook 5 min or until slightly thickened. Spoon over cheese and serve.

1 8 oz pkg camembert cheese
1 tbsp butter, room temp
1 loaf artisan roasted garlic bread, thinly sliced
