QUICK BAKED CHICKEN PARMESAN

In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. My family's not big on lots of sauce and cheese, so I just use a little to flavor the dish. Feel free to add more if you like, but it's excellent as-is. Serve chicken over pasta with additional sauce.

Quick Baked Chicken Parmesan image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Whisk water and egg together in a bowl until smooth. Combine bread crumbs, 2 tablespoons Parmesan cheese, oregano, basil, thyme, and garlic powder in a separate bowl.
  • Dip each chicken breast in egg mixture, allowing excess egg to drip back into bowl. Coat each chicken breast in bread crumb mixture, shaking off excess. Repeat dipping each coated chicken breast in the egg mixture and the bread crumb mixture for a double-coating and place in the prepared baking dish. Spray breaded chicken breasts with cooking spray.
  • Bake in the preheated oven for 40 minutes. Pour spaghetti sauce over each chicken breast and top each with mozzarella cheese and remaining Parmesan cheese. Continue baking until chicken is no longer pink in the center and the cheeses are melted, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:

  • Preheat oven to 400°F. Combine bread crumbs, Italian seasoning and garlic powder in shallow dish. Dip chicken in egg, then crumb mixture; turn to coat. Arrange chicken in 13 x 9-inch baking dish. Steps:

  • Preheat oven to 350°F.
  • Combine sour cream and milk and mix well. Pour into a shallow dish in which the chicken can be dipped.
  • In a second shallow dish, combine the bread crumbs, Parmesan cheese, rosemary, and sage.
  • Coat the chicken with the sour cream mixture and then dredge in the bread crumb mixture until well coated.
  • Place on a greased baking dish.
  • Bake for 25 minutes, or until tender and chicken is cooked through.
  • Meanwhile, prepare the spaghetti per the package directions.
  • Warm each sauce separately in small pots over the stovetop.
  • To serve, divide the pasta evenly between four plates. Top the pasta with tomato sauce, and place a piece of chicken on top. Drizzle with Alfredo sauce and sprinkle with the shredded cheese. Garnish with optional parsley.

Steps:

  • Preheat oven to 400°F.
  • In a medium mixing bowl, beat egg whites with fork until slightly frothy. Then, mix breadbrumbs and 2 tablespoons parmesan cheese in a pie plate.
  • Dip chicken breasts in egg whites, then in breadcrumb mixture, coating both sides.
  • Lightly coat a baking sheet with cooking spray. Place chicken breasts on baking sheet. Bake for approximately 12 minutes, turn and bake approximately 12 more minutes, or until chicken is no longer pink the center and the coating is golden brown.
  • While chicken is baking, prepare spinach pasta, according to package directions.

Steps:

  • Preheat the oven to 450 degrees.
  • Pulse the tomatoes and their juices in the food processor until coarsely chopped, about 12 pulses.
  • Cook the oil, garlic, red pepper flakes and 1/4 teaspoon of salt in a 12-inch skillet over medium-high heat until fragrant, about 1 minute. Stir in the tomatoes, water, 1 cup of the broth, oregano and the pasta. Bring to a vigorous simmer, cover and cook until pasta is tender, 15 to 18 minutes, stirring often.
  • Stir in 3/4 cup of the Parmesan, 1/4 teaspoon of pepper and the chopped chicken. Taste and adjust the seasonings if needed. If the pasta seems dry, stir in the remaining 1/2 cup of broth.
  • Transfer to a buttered oven-proof baking dish and sprinkle with mozzarella and remaining Parmesan. Bake 5 to 10 minutes or until the cheese is melted and bubbly. Sprinkle with basil and serve.
