HAWAIIAN PINEAPPLE CHICKEN
I love the sweet and tangy pineapple sauce. I serve this over rice and accompany it with green beans. This recipe was handed down to me from my mother-in-law many years ago.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Melt butter in a saucepan over medium heat; stir ketchup and brown sugar into melted butter, stirring to dissolve brown sugar. Whisk cornstarch into vinegar until smooth; pour into pan. Whisk constantly and add salt, soy sauce, and Worcestershire sauce to mixture; bring to a simmer. Cook until thickened, about 2 minutes. Stir pineapple into sauce.
- Arrange chicken pieces in a 9x13-inch baking dish; pour pineapple sauce over chicken.
- Bake until sauce is bubbling, chicken is browned, and the juices run clear, about 45 minutes. An instant-read meat thermometer inserted into the thickest part of a thigh should read at least 160 degrees F (70 degrees C).

- Arrange chicken in a shallow baking dish coated with cooking spray. In a small bowl, combine the pineapple, sherry or broth, mustard, honey and butter; mix well. Spoon over chicken; sprinkle with paprika. , Bake, uncovered, at 400° for 35-45 minutes or until a thermometer reads 180°.

Steps:
- Preheat oven to 400°F.
- Rinse chicken and place in a shallow casserole dish or 9X13 pan. Sprinkle chicken with salt.
- Drain pineapple, reserving juice.
- Mix pineapple juice, garlic, cornstarch, Worcestershire sauce, Dijon mustard and rosemary until cornstarch is smooth.
- Pour sauce over chicken.
- Arrange pineapple slices over the chicken and place a cherry inside of each pineapple center.
- Cover the pan and bake for 30 minutes.
- Remove the cover and bake for 5 minutes longer.
- Spoon sauce over the chicken (and rice) when serving.

- Preheat oven to 325 degrees F.
- Cut chicken breasts into bite-sized pieces and season with salt and pepper.
- Place cornstarch and eggs in small separate bowls. Dip chicken into cornstarch then coat in egg mixture (I know it seems backwards to dip it in cornstarch first, but trust me on this!).
- Heat canola oil in a large skillet over medium-high heat and cook chicken until browned.
- Place the chicken in a 9 x 13 greased baking dish sprayed lightly with non-stick cooking spray.
- In a medium-sized mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, minced garlic, and cornstarch.
- Add the red bell pepper, green bell pepper, green onions and pineapple tidbits.
- Pour over chicken and bake for 1 hour, stirring every 20 minutes.
