Steps:
- Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
- In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
- Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.
BAKED HOMINY AND CHEESE
My mother made this casserole when I was growing up, so I know the recipe is an old favorite with many folks. After I married, I made sure this dish was regular fare at our house. It's one of those versatile "go-with-anything" dishes my family loves!"

BAKED HOMINY PIE
I love hominy, and I wanted to make a pie or quiche using it. Somehow the flavors of the bacon, cheese, and tomatoes crept in. Of course, everything is better with bacon, cheese, and tomatoes, right?

Steps:
- 1. Preheat oven to 350°F. Spray or brush a 9-inch pie plate with olive oil. Heat tortillas for 20-30 seconds in the microwave or a hot dry skillet to soften them. Place one tortilla in the plate, fitting it in like a piecrust. Spray or brush tortilla with olive oil, then sprinkle with half the grated cheese. Fit the second tortilla over the first. Set aside.
- 2. Cut bacon into ½-inch pieces. Cook bacon in a skillet until not quite crisp. Remove and drain on paper towels. In rendered bacon fat, cook onion until soft but not browned. Drain well.
- 3. In a mixing bowl, stir together hominy, beaten eggs, cream, grated cheese, onion, salt, and pepper until well combined. Pour carefully into tortilla shell. Place sliced tomatoes in a single layer on top to cover pie. Top evenly with the bacon.
- 4. Bake for 25-35 minutes, until eggs are set and tortillas are nicely browned. Check at 15 minutes, and cover edges with foil or a pie guard if tortilla browns too quickly. Allow to cool 15 minutes before slicing. Slice with sharp knife. May be served at room temperature.
HOMINY PIE - CASSEROLE
This is a recipe from The Grange Cookbook I got in the 70's. When our daughter was a toddler, she tried to flush it down the toilet! When she went out on her own, I gave her the cookbook along with my very first one my dad gave me. It is very versatile. I'm listing the original recipe, but through the years I have added different things to it, such as left over squash casserole, Velveeta instead of cheddar, soy sauce, or beef bouillon to make a soup rather than a casserole. I serve it with tortilla chips.

Steps:
- To make the pastry, tip both the flours, a pinch of salt and the cayenne, if using, into a large bowl. Mix, then rub in the butter using your fingertips until the mixture is crumbly. Mix in the egg and 1 tbsp cold water using a cutlery knife. Bring the pastry together into a ball, then cover and chill for 30 mins. Knead briefly until pliable, then roll out until it's large enough to line a 20cm deep pie dish. Line the dish, pushing the pastry into the edge, then trim. Chill until needed.
- Meanwhile, for the filling, heat the butter in a large saucepan until sizzling and cook the onions with some seasoning and the leeks and thyme, if using, for 12-15 mins until soft and sticky. Stir the potatoes into the onion mix, then reduce the heat, cover and cook for 10-15 mins, stirring occasionally, until the potatoes break down when pressed with a wooden spoon. Pour over the cream, stir for a minute, then turn off the heat and leave to cool a little.
- Heat the oven to 200C/180C fan/gas 6 with a baking tray inside. Stir half the cheddar and most of the spring onions through the potato and onion mix. Scatter half of the remaining cheddar over the base of the pastry case, then tip in the tip filling. Scatter with the rest of the cheese and spring onions. Bake on the hot baking tray for 40-45 mins until the pastry is deeply golden and the filling is bubbling. Remove from the oven and leave to rest for at least 10 mins. Serve hot, or leave to cool until just warm.

CHILI HOMINY BAKE
This is an old family favorite I got from an old Better Homes & Gardens Ground Meat Cookbook. It's super easy and was great after working all day and having to feed 3 hungry growing boys. Now grown, they still request this dish. We like to serve with a salad and a pan of cornbread is a must! If you have a cast iron skillet - use it! No need to dirty another dish. Brown the meat per directions, add everything in and slide it into the oven.

BAKED HOMINY WITH CHEESE
The taste and texture of this dish is subtle and unusual but my BF and I think it's absolutely delicious. My apologies if you haven't found this as appealing as we do. The recipe comes from a fantastic cookbook of the midwestern region (of the U.S.) called "Hollyhocks and Radishes." The original ingredients call for 2 cups cream instead of milk and twice the butter, so if you don't mind the extra fat, go ahead. I also like to add more horseradish, at least 1 tablespoon. In my area hominy can be found in the mexican foods section of the supermarket.

- Pinto Posole. As I said, posole is the first dish most people think of when hearing the word hominy. So to kick off this list is none other than one of my favorite vegan versions.
- Hominy Au Gratin. Do you love gratin? Try something new and make it with hominy. It’s super cheesy and creamy like regular gratin; except with each bite, you get the earthiness of hominy and salty bacon bits to boot.
- Beef and Hominy Casserole. This casserole is brimming with savory, cheesy, and tomatoey goodness. It’s also rich in protein and uses up a lot of ingredients that are hiding in your pantry.
- Blue Cheese Hominy Casserole. If you think casseroles can’t be adventurous, you’ve never tried this. The bite of blue cheese, smokiness of paprika, and bounty of hominy are far from subdued.
- Pinto Bean and Hominy Salad. You can also eat hominy fresh like this easy Texan-style salad. It’s full of garden-fresh veggies, pinto beans, and chewy hominy.
