BAKED PESTO CHICKEN, LOW CARB RECIPE
I think this came from South Beach Diet - I got it in an email. If you like pesto, you'll love this! And so easy, too.

Steps:
- 1. Preheat oven to 375°. Lightly coat a 9x9 or 8x12 inch baking dish with oil. Spread half the pesto in the baking dish.
- 2. Season chicken breasts with salt and pepper. Lay chicken breasts over pesto in an even layer. Spread with remaining pesto.
- 3. Cover baking dish with foil and bake until chicken is cooked through, about 25 minutes. Uncover and top with cheese. Bake until cheese is melted, 5 more minutes. Serve hot.
