BAKED STEEL-CUT OATS
Steel-cut oats in a ready-to-go breakfast bar. Lower your cholesterol and enjoy a nice treat in the morning or take it to go. My boys love it hot or cold, in a bowl or as a square, with milk or maple syrup. It's 5 stars for all of my family. My in-laws tried it and love it as well. Serve with additional maple syrup.

BAKED STEEL-CUT OATS AND APPLES
I needed a breakfast oatmeal dish that I could warm and serve quickly. I had several baked oatmeal recipes, but they all had eggs--I wanted to try one without eggs. I particularly like that this recipe can be made ahead and warmed when needed. Also, the apples mostly float to the top, making an attractive, delicious oatmeal...

Steps:
- 1. Preheat oven to 375 degrees and spray an 8"x 8" pan with cooking spray.
- 2. Put oats and raisins in a large mixing bowl and pour boiling water over them.
- 3. Add apples, pumpkin pie spice, brown sugar, nuts, and salt -- stir until combined.
- 4. Add milk and stir again.
- 5. Pour into prepared dish and bake for 50-60 minutes or until browned and set. (Liquid is mostly incorporated/evaporated. Apples will be mostly on top.)
- 6. Spoon out or cut portions to serve warm. Or cool and refrigerate. The oatmeal warms nicely in the microwave. I like to add a little milk before I warm it. Or freeze individual servings for a quick morning breakfast later.

- In a medium Dutch oven or large saucepan (around 3.5 quarts), melt the butter over medium heat (if you’re not using butter, just warm the pan). Add the steel-cut oats and cook until fragrant, stirring often, about 2 minutes (this step enhances the flavor of the oats).
- Add the apple chunks, water and salt. Stir to combine, and raise the heat to high to bring the mixture to a simmer. Once simmering, reduce heat to medium-low and cook for about 35 minutes, until almost all of the liquid has been absorbed and the oats are nice and creamy. Stir every five minutes in the beginning, and more frequently as time goes on (you might need to dial down the heat as well).
- Remove from heat and let the oatmeal rest for 5 minutes before serving so it has more time to thicken up. Carefully taste (it’s hot!) and add maple syrup or honey if you’d like sweeter oatmeal (I used tart apples, so I added 1 tablespoon).
- Divide the mixture into individual bowls and serve with any toppings you’d like. If you’re saving extra portions for later, let them cool to room temperature, then cover and refrigerate for up to 4 days. Leftovers reheat well in the microwave, and would likely reheat well on the stove if you add some extra water to loosen them up.
