BAKED SWEET & SAVORY MASHED POTATOES
I got this from the internet--from someone who got it from Southern Living. I made it for Thanksgiving and my family just about licked the bowl clean! Really delicious!

Steps:
- Bring potatoes, 1 teaspoon salt, and water to cover to a boil. Cook 30 minutes, or until tender. Drain.
- Return potatoes to pan. Add sweet potatoes and cream cheese. Mush until smooth with potato masher. Stir in bacon, next 3 ingredients, remaining 2 teaspoons of salt.
- Spoon mixture into lightly greased 11x7-inch baking dish. Bake uncovered at 350°F for 20 minutes.
- Garnish with the rest of the bacon.

- Drain.
- Return potatoes to Dutch oven.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 2 quart casserole dish.
- In a large bowl, blend together the sweet potatoes, milk, orange juice, eggs, vanilla, sugar, salt, butter, nutmeg and cinnamon. Pour into prepared casserole dish.
- Mix together the 1/4 cup butter, brown sugar, flour and pecans; sprinkle over sweet potato mixture.

- Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat.
- Wash and peel the sweet potatoes. Cut them into medium size pieces. Place the cut sweet potatoes in the baking dish and turn them so that they are coated with the olive oil. Sprinkle moderately with oregano, and salt and pepper (to taste).

- Heat the oven to 350 degrees. Bake the sweet potatoes for 1 to 1 1/2 hours, or until thoroughly fork tender. (If you're making these for Thanksgiving, you can tuck the potatoes into corners of the oven at any time during the roasting of the turkey.)
- Cut each potato in half lengthwise, scoop the pulp into a bowl and mash with as much butter as you dare to use. Season to taste with salt and pepper. Add more butter, if desired. Sprinkle with flaky sea salt, if using. Serve while still warm or reheat before serving.

- Preheat oven to 400 degrees. Prick sweet potatoes once on both sides with a fork. Wrap each sweet potato with a sheet of aluminum foil.
- Place sweet potatoes on baking sheet and bake in preheated oven 40 minutes*. Turn to opposite side and continue to bake until a knife easily glides through potatoes, about 30 - 50 minutes longer.
- Near the end of potatoes baking, place butter in a light colored medium skillet or saucepan. Heat over medium heat, and let cook, stirring occasionally until butter has browned (brown flecks should just start to bubble up into foam if using a saucepan it's harder to tell). Pour into a dish so it doesn't continue to cook and burn.

- Place the sweet potatoes in a large stockpot. Fill the pot with cold water, enough that the water line sits about 1 inch above the potatoes. Stir the garlic and 1 tablespoon sea salt into the water. Turn the heat to high and cook until the water comes to a boil. Reduce heat to medium-high (or whatever temperature is needed to maintain the boil) and continue cooking the potatoes for about 10-12 minutes, or until a knife inserted in the middle of a potato goes in easily with almost no resistance. Carefully drain out all of the water.
- Meanwhile, as the sweet potatoes are boiling, heat the butter, milk, smoked paprika, and an additional 1.5 teaspoons of sea salt together either in a small saucepan or in the microwave until the butter is just melted and warm. (You want to avoid boiling the milk.) Set aside until ready to use.
- After draining the water, immediately return the sweet potatoes to the hot stockpot, place it back on the hot burner, and turn the heat down to low. Using two oven mitts, carefully hold the handles on the stockpot and shake it gently on the burner for about 1 minute to help cook off some of the remaining steam within the potatoes. Remove the stockpot entirely from the heat and set it on a flat, heatproof surface.
- Using your preferred kind of potato masher (I recommend this one in general, or this one for extra-smooth), mash the sweet potatoes to your desired consistency. Pour the melted butter mixture over the potatoes, and fold it in with a wooden spoon or spatula until potatoes have soaked up the liquid. Give the mixture a taste, and season with extra salt, pepper, and/or smoked paprika as needed, to taste. Set aside.
