GRILLED BABY EGGPLANT WITH BALSAMIC GLAZE
Steps:
- For the grilled baby eggplant: Preheat a grill or grill pan to medium high.
- Cut off the stems from the baby eggplant and slice them in half lengthwise. Make a 1/2-inch-deep crosshatch pattern on the flesh side of each using a knife. Put them in a medium bowl.
- In a small bowl, mix together the oil, rosemary and garlic. Pour the mixture over the eggplant, tossing to coat completely, and sprinkle generously with salt and pepper. Grill, flipping halfway through, until tender and dark, about 10 minutes.
- For the glaze: Meanwhile, in a small saucepan, combine the oil, stock, balsamic vinegar, honey, mustard, lemon juice, salt and pepper. Cook over low heat until the glaze is reduced by half, about 10 minutes. Drizzle over the eggplant to serve.

BALSAMIC-HERB GRILLING GLAZE
A nice tasty glaze to use on meat, fish and chicken, and tempeh during grilling. Can also use it as a marinade. You can make this in advance up to a week and store in refrigerator; just warm to room temperature before using.

BALSAMIC GLAZE
This glaze is a must-have accompaniment to drizzle over fish, poultry, vegetables, pastas, salads, and even fruit. It can turn any dish from ordinary to extraordinary with its perfectly balanced, intense flavor of sweet and tangy. It adds a beautiful, deep pop of color to any dish to create a perfect, professional presentation. I make a large batch and have it on hand in the fridge at all times. Once you start adding this glaze to dishes you will become addicted and crave its intense flavor.

- PARBOIL CARROTS: If using medium or large carrots, cut the carrots lengthwise in halves or quarters to about 1/2-3/4 inch thickness. Bring 1-2 inches of water to boil in large saucepan. Add pinch of salt. Add carrots and boil for 7 minutes or until tender and easily pierced with a knife. Drain.
- GRILL CARROTS: Lay carrots on a pan and brush with glaze. (I also spray them with some oil to be extra sure of no sticking to grill). Place on grill. Cover. Grill for 5-6 minutes total, turning and glazing a couple of times.
