BANANA CARDAMOM CAKE (OR CUPCAKES) (WW)

We made these into cupcakes and skipped the frosting -- if using the frosting this equals 5 WW points. I figure without the frosting this is 4 pts/serving. Recipe source: WW Heathy Cooking Basics.

Banana Cardamom Cake (Or Cupcakes) (Ww) image

Steps:

  • Preheat oven to 350-degrees F.
  • To make cake: whisk together dry ingredients (flour - salt) in a medium bowl.
  • In a seperate bowl whisk together remaining cake ingredients (banana - vanilla).
  • Gradually add wet mixture to dry, stirring until blended.
  • Pour batter into pan (9x13 sprayed with Pam) or into paper lined muffin tins (makes about 18 cupcakes). For cake bake 30-35 minutes; for cupcakes bake for 20-25 minutes or until toothpick in center comes out clean. Remove to cooling rack and let cool.
  • For frosting: in a medium bowl and and electric mixer on high speed, beat all frosting ingredients until smooth and then with a spatula frost cake or cupcakes.

3/4 cup buttermilk (I used 3/4 c1 % milk with 1 T lemon juice)
2 bananas, mashed
2 eggs
1 egg white
1/3 cup canola oil
1 teaspoon vanilla
1 (8 ounce) package light cream cheese, room temp
1/2 cup confectioners' sugar
3 tablespoons 1% low-fat milk
1 teaspoon vanilla

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease 14 muffin cups.
  • Lightly beat bananas and white sugar together in a bowl until smooth; add eggs, one at a time, until incorporated. Beat in vegetable oil until well blended, 1 to 2 minutes. Stir in flour, baking soda, and buttermilk; mix well. Fold in pecans. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, 20 to 30 minutes. Sprinkle cupcakes with confectioners' sugar.

Banana Cupcakes with Caramel Buttercream image

Steps:

  • Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Whisk dry ingredients in a large bowl. Cream butter and sugar with a mixer until light and fluffy. Add eggs, 1 at a time, beating after each addition.
  • Reduce speed to low. Mix mashed bananas, buttermilk, and vanilla in a bowl. Add dry ingredients to butter mixture in 3 additions, alternating with wet ingredients and ending with dry. Scrape sides of bowl. Stir pecans into batter. Divide batter among muffin cups, filling each 2/3 full.
  • Bake cupcakes until testers inserted into centers come out clean, about 20 minutes. Let cool in tins on wire racks. (Unfrosted cupcakes will keep, covered, for up to 3 days.) Once cupcakes are cool, frost tops with caramel buttercream. Frosted cupcakes will keep, covered and refrigerated, for up to 2 days. Top with banana slices before serving.

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a bun tin with 8 paper cases. In a large bowl, mix the flour, baking powder and sugar with a pinch of salt.
  • In a separate bowl, beat the egg, melted butter and milk for 20 secs; add the mashed banana and beat for a further 5 secs until everything is nicely mixed.
  • Pour the banana mix into the flour and fold everything together. Once it is almost combined, add 85g of the white chocolate - the mixture will still look a little lumpy. Spoon the cake mix into the paper cases and bake for 18-20 mins until golden and risen, and a skewer inserted comes out clean. Cool on a wire rack.
  • Meanwhile, melt the remaining white chocolate over a pan of barely simmering water. Allow to cool a bit, then spread on top of the cakes. Add a couple of slices of banana and sprinkle with cinnamon.
