MINI BANANA BREAD LOAVES
Delicious recipe I created when I had no eggs but wanted banana loaf for my new mini loaf pans!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Combine flours, oats, baking soda, cinnamon, and salt in a medium bowl. Mash bananas into the dry ingredients.
- Combine sugars and margarine in a large bowl; beat with an electric mixer until creamy. Mix in milk and vanilla extract. Add the flour mixture and raisins; mix well. Pour batter into 4 mini silicone loaf pans. Place loaf pans on a baking sheet.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.

BANANA CINNAMON MINI LOAVES
Old recipe I found in my homemade cookbook. I made two variations and thought of a lot more I could make with this recipe. Light and so amazing. Surprised the employees at my husbands work place. They all raved and were so thankful for a nice treat.

Steps:
- 1. Heat oven to 350 F. Grease 4 to 5 mini loaf pans.
- 2. Combine all ingredients except walnuts. Beat on low with a mixer, scrap. Turn mixer to medium high and mix for 2 minutes. Pour into pans.
- 3. Bake 30 minutes or until toothpick comes out clean.
- 4. Variations: chocolate chips, pecans, chocolate cake mix This also can be made in a bundt pan. Adjust the baking time to 43-53 minutes. If you want to make larger loaves, adjust the time to 40-45 minutes, then ck.
- 5. Glaze: 1/2 cup of can frosting 2-3 tsp of milk 1/4 tsp cinnamon

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas. , Combine the flour, cardamom, baking soda, cinnamon and nutmeg; gradually add to banana mixture just until moistened. Fold in walnuts. , Pour into six greased 4-1/2x2-1/2x1-1/2-in. loaf pans. Bake at 350° for 22-26 minutes or until a toothpick inserted in the center comes out clean. - Heat oven to 350ºF.
- Drain pineapple, reserving 1 cup juice. Add reserved juice to dry cake mix, dry pudding mix, cinnamon, eggs and oil in large bowl; beat with mixer until blended. Add crushed pineapple, bananas and nuts; beat just until blended.
- Pour into 5 mini foil loaf pans sprayed with cooking spray.

- In a large bowl, combine the flour, baking soda, and salt; set aside. Place the bananas in another large bowl and mash them well with a whisk or a potato masher or a fork. Add the brown and granulated sugars and the melted butter and beat with an electric mixer or a whisk until well blended (there will be little bits of banana that don't get perfectly smooth). Beat in the eggs one at a time, and then beat in the vanilla. Add the dry ingredients, switch to a spoon, and stir just until the flour is incorporated.
- Spoon the mixture evenly into the tins (they will be fairly full), and bake until a wooden skewer inserted into the middle of the mini loaves comes out clean, about 25 to 28 minutes. - In a large bowl, melt the butter and let cool slightly. Whisk in the sugar then the eggs and vanilla. Stir in the flour and baking soda. Fold in the mashed bananas until just combined.
- In a small bowl, use a fork to stir together the cinnamon sugar swirl ingredients until thick and well combined. If your swirl is too thick to swirl, add an additional tablespoon of melted butter until it is thin enough to swirl. Note: if it’s too thin, it will just spread and not hold its swirl as the loaf bakes.
- Spread 1/4 of the batter evenly into the bottom of the prepared pan. Dollop 1/4 of the cinnamon sugar mixture over the batter in the pan and then make a nice thick swirl through the batter with a table knife or bottom of a wooden spoon. Place 1/3 of the remaining batter evenly over the first layer and swirl with 1/3 of the remaining cinnamon sugar mixture.
