BANANA-NUT CORN BREAD

A boxed corn bread mix gets a tasty treatment from Janice France of Depauw, Indiana when dressed up with bananas and chopped walnuts. The moist golden loaves are a great addition to a brunch buffet or bake sale.

Steps:

  • In a large bowl, combine all ingredients just until blended. Spoon into two greased 8x4-in. loaf pans. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine flour, cornmeal, milk, bananas, sugar, vegetable oil, baking powder, and salt together in a bowl until batter is smooth; pour into the prepared baking dish.

Steps:

  • Pre heat the oven at 350 degrees F.
  • Mix flour, baking powder, baking soda and salt in a large bowl.
  • Cream butter, add in sugar slowly.
  • Once it is well creamed, add in eggs.
  • Mix in water and bananas.
  • Add in Flour mixture, stir till it is moistened.
  • Stir in cereal and walnuts.
  • Pour into greased 9x5 inch loaf pan.
  • Bake for 55-65 minutes, till toothpick inserted in center comes out clean.
  • Cool for 10 minutes before removing from pan.
  • Cool completely on wire rack.

  • Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla. In another bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with bananas, beating well after each addition. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. Bake 65-75 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.
