BANANA WEET-BIX CHOC CHIP MUFFINS

I found this in a old issue of Delicious Mag, a great way to use up those crushed weetbix at the bottom of the box!

Banana Weet-Bix Choc Chip Muffins image

Steps:

  • Preheat oven to 180°C.
  • Grease a 12-hole muffin pan. Mash bananas in a bowl, then crumble in Weet-Bix and stir in the milk.
  • Set aside for 10 minutes. Meanwhile, beat together the eggs and margarine, then add to the banana mixture. Combine flour and sugar in a large bowl and add wet ingredients and choc chips.
  • Stir until just combined, then spoon into muffin pan and bake for 25 minutes until a skewer inserted into the centre comes out clean.

4 Weet-Bix
185 ml milk
2 eggs
80 g margarine
225 g self-raising flour, sifted
2 tablespoons brown sugar
1 cup chocolate chips

Sour Cream Banana Choc Chip Muffins image

Steps:

  • Preheat oven to Gas 4/180C350°F.
  • Prepare muffin tin with paper liners/spray with Pam.
  • Sift dry ingredients into a large bowl, whisk and set aside.
  • Melt butter in microwave.
  • Peel, chop and mash banana.
  • Lightly beat egg and add to banana, followed by sour cream, vanilla extract and finally melted butter. Whisk until smooth.
  • Add wet to dry mixture and gently combine ensuring not to overwork batter. Add chocolate chips.
  • Evenly distribute batter between six muffin cups, sprinkle with sugar.
  • Bake at Gas 4/350F/180C for 30 minutes until golden.

  • Add bananas, honey, vanilla, oil, egg, milk and yogurt to a blender. Blend on high for 1 minute or until well combined, smooth and creamy. Add wet ingredients to dry ingredients and mix until just combined. Gently fold in chocolate chips.
  • Divide batter evenly into muffin tin, sprinkle each muffin with a few more chocolate chips and bake for 20-25 minutes or until toothpick comes out clean or with just a few crumbs attached.
  • Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm and even better the next day. Makes 12 muffins.
