HONEY BANANA WHOLE WHEAT BREAD-BREAD MACHINE

This is a healthy loaf of sweet banana bread. Makes a great peanut butter sandwich. This recipe makes a 1 1/2 pound loaf. The recipe comes from Breadman.

Steps:

  • Makes 1 1/2 pound loaf Add all ingredients to bread pan in order given.
  • This recipe was created using the"Basic Bread" setting.

1/2 cup warm water
1 tablespoon butter or 1 tablespoon canola oil
3 tablespoons honey
1 egg
1/2 teaspoon vanilla
1 cup whole wheat flour
1 1/4 cups bread flour
1 small banana, sliced
1 1/2 teaspoons poppy seeds
1/2 teaspoon salt
1 1/2 teaspoons dry yeast

A quick banana bread for the bread machine. Use the DOUGH setting for mixing, then BAKE with the control set to light.

Banana Bread - Quick Bread for Machines image

Steps:

  • Place ingredients in the pan of the bread machine.
  • Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
  • Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is batter on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to ensure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

Freeze option: Freeze sliced loaf in resealable plastic freezer bag. To use, thaw at room temperature.

BANANA WHEAT BREAD (BREAD MACHINE)

I have a habit of jotting down promising recipes whenever I'm perusing magazines in a waiting room. This one is on an envelope postmarked 1996. The whole wheat flour and banana flavors in this yeast bread really complement one another. I like to make cheese sandwiches with this, or eat with butter and jam. Try french toast with it, too. It's much lower in fat than the typical quick bread banana bread. Prep time is approximate, depending on which alternative you choose.

Banana Wheat Bread (Bread Machine) image

Steps:

  • Place ingredients into your bread machine in order specified by the manufacturer. Slice the bananas right into the pan with the liquid ingredients.
  • Set machine to white bread setting and let 'er rip.
  • Check for the consistency of the dough - you may need to add more flour or more liquid, depending on the exact size of your bananas.
  • Alternatively, set on dough setting, and after it rises, remove, punch down, put into a greased loaf pan, let rise, covered, in warm spot. Then bake at 350° for about 35 minutes, or until done.

  • Combine all dough ingredients (except the nuts, raisins, and dates) into a bread-machine pan in the order given. Set on the DOUGH cycle. When machine signals it's time for "add-ins", add nuts and dried fruit.
  • At the end of the cycle, if the dough has risen to double its size, remove dough from pan. If not double, leave the dough in the machine until it has doubled. Remove to a lightly-floured surface and form into a ball. Allow dough ball to rest for 10 minutes.
  • Divide into 3 equal portions. Form into 3 cylinders each about 12 inches long. Braid as shown in the picture, tucking the ends under.
  • Transfer to a cookie sheet covered with parchment paper or a silicone baking mat. Let rise for about 45 minutes covered with a soft tea towel.
