- Combine banana, light rum, lime juice, triple sec, and sugar in a blender; puree until smooth. Add ice cubes and blend on highest setting until slushy, 15 to 20 seconds. Pour into a glass and serve.

- Freeze the banana slices on a plate until firm, at least 3 hours or overnight.
- Transfer the banana slices to a blender. Add the rum, cream of coconut, lime juice and 3 cups ice. Blend until smooth and thick, adding more ice if needed. Pour into large glasses; garnish each with a cherry.

- 1. In a blender add all ingredients, except ice. Blend until everything is combined.
- 2. Add the ice and blend until frothy. Serve in tall glasses and garnish with a maraschino cherry, if desired.
BANANA DAIQUIRI

- Into a blender add 1 banana, 1/2 cup coconut milk, 1/2 of the lime juice, 1/4 cup of the sugar, and 3 cups of ice and add 2 ounces of rum if desired. Blend until smooth, about 1 minute. Pour into 2 tall glasses, and repeat for 2 more drinks.
BANANA DAIQUIRI CHEESECAKE

- Grease bottom and sides of 8-inch pan. Stir flour, pudding mix, and baking powder together in a large mixing bowl. Add the 1/2 cup milk, the butter, and egg. Beat with mixer on medium for about 2 minutes. Pour batter into prepared pan. Slice bananas, and arrange slices atop the batter and set aside.
- Beat cream cheese, sugar, 2 tablespoons of milk, lime juice, and rum extract in a medium bowl with mixer on medium till smooth. Spoon cheese mixture over banana slices, carefully spreading mixture over them.
- Bake at 350°F for 30-35 minutes or until center is set. Let set about half an hour until cool and then refrigerate for 2 hours before serving.
