- Cut the roast into quarters; place in a greased 5-qt. slow cooker. In a bowl, combine barbecue sauce, preserves, green pepper, onion, mustard and brown sugar; pour over roast. - Heat oven to 350°F. Spray rectangular baking dish, 11x7x1 1/2 inches, with cooking spray.
- Make potatoes as directed on pouch, using water, milk and butter. Spread half of the potatoes over bottom of baking dish. Layer with beef, 1 cup of the cheese and remaining potatoes.

BARBECUED BEEF RIBS

- For the ribs: Heat the oven to 325 degrees. Season the ribs all over with salt. In a large Dutch oven or other heavy pot, heat 2 tablespoons oil over medium-high heat. Add the ribs and brown on all sides, turning with tongs, 5 minutes a side. Transfer to a platter and pour off all but 2 tablespoons fat.
- Add the onion, carrots, garlic, lemon grass and ginger to the pot. Cook over high heat until lightly browned, 3 minutes. Stir in the soy sauce, brown sugar, rice vinegar and 3 cups water, and bring to a boil. Return the ribs to the pot, immersing them in the liquid. Tightly cover and bake, turning the ribs once or twice until very tender, about 3 1/2 hours. Let the ribs cool in the liquid, then drain well. (Ribs can be refrigerated for up to 24 hours.)
- For the glaze: In a heavy saucepan, combine all the glaze ingredients and simmer over medium heat until thick, about 10 minutes. Strain.
- Prepare a grill for direct grilling over high heat. Brush and oil the grate. Cook the ribs until dark brown all over, 3 to 5 minutes a side, basting with the glaze. Serve with the remaining glaze drizzled on top or passed separately in a bowl.

- Using a very sharp knife, cut the beef into very thin slices, each about 5 inches long and 2 inches wide. Place them in a large nonreactive bowl and set aside. In another bowl, combine the soy sauce, water, sugar, sake, scallion, garlic and sesame oil and stir until the sugar is dissolved. Pour the mixture over the meat and set aside to marinate at room temperature for 1 hour, stirring occasionally.
- When ready to cook, prepare a charcoal or table-top grill with a fairly fine grill surface. When very hot, remove the meat from the marinade and discard the marinade. Grill the meat until nicely browned, about 2 to 3 minutes per side. (Alternatively, preheat a large cast-iron skillet over high heat and cook the meat slices a few at a time, turning once, until browned.) Transfer to a warmed platter.
- Place soybean paste, hot peppers and garlic in separate bowls and place lettuce leaves on a plate. Serve with rice and side dishes (recipes follow). - Put meat in roaster pan with 1 1/2-2 inches of water.
- Sprinkle meat with dry seasonings, salt and pepper and rub over meat.
- Pour sauces over meat.
- Cover and bake in oven at 325°F for 5 hours.
- (You may be able to use a crockpot too!)
- While meat is baking, you can make the sauce.
- Combine all sauce ingredients in saucepan.
- Bring to boil.
- Lower heat.
- Cook and stir for 10 minutes; set aside.
- Take meat out of oven and let set for about 10 minutes.
- Slice meat as thinly as you can.
- Cover with barbecue sauce and keep warm till ready to serve.
