GARLIC-BROWN SUGAR CHICKEN THIGHS
I love the crunchy chicken skin and brown sugar pan sauce that comes out of this.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Season chicken thighs with salt and pepper.
- Melt 2 tablespoons butter in a large oven-proof skillet over medium-high heat. Add chicken, skin-side down, and sear until brown, 2 to 3 minutes per side. Remove chicken to a plate.
- Melt remaining butter in the skillet. Add garlic; cook and stir until fragrant, 1 to 2 minutes. Remove from heat and stir in brown sugar, honey, oregano, thyme, and basil until well combined. Return chicken to the skillet.
- Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

BBQ" STYLE CHICKEN THIGHS
I have not yet replaced the bbq that was destroyed in Hurricane Sandy. Yes, it is on my "to do" list with many other items. Until then, when the sun goes down and the cool of the evening arrives I made the closest next best thing.

- 1. Preheat Oven 350 degrees: Combine all of the ingredients for the bbq sauce in a small bowl. Clean and pat dry the chicken thighs. Place in a baking dish and rub the chicken thighs all over with the sauce. Place in oven and bake for 40-45 minutes.
BARBECUED CHICKEN THIGHS WITH BROWN SUGAR-HICKORY SAUCE

- Bring first 10 ingredients to boil in medium saucepan, whisking to blend. Reduce heat to low; simmer 10 minutes. (Can be made 1 week ahead. Cover and refrigerate.)
- Spray grill rack with nonstick spray. Prepare barbecue (medium-high heat). Sprinkle chicken with salt and pepper. Place chicken on grill, skin side down; cook until skin browns, about 8 minutes. Turn chicken over and continue grilling until cooked through, about 8 minutes longer. Transfer 1 cup barbecue sauce to small dish. Brush skin side of chicken with sauce from dish; turn skin side down and cook 2 minutes. Brush chicken with more sauce; turn skin side up and grill 2 minutes. Arrange chicken on platter. Serve with remaining sauce.
BARBECUED OVEN-BAKED CHICKEN THIGHS
This is easy and really good! This makes a great meal served with fries and coleslaw! If you are in a rush you can omit browning the chicken and increase the cooking time slightly, I find that the sauce will be thinner from the chicken juices if you do not brown the chicken first, browning also adds to the flavor of this dish --- if possible use only French's mustard for this, for some reason other brands of prepared mustard are just not as good. Adjust all ingredients to taste if you prefer a sweeter sauce add in more brown sugar.

- Grease a large casserole dish.
- Sprinkle the onion slices and green pepper (if using) on the bottom of the baking dish.
- Season the chicken with salt and pepper, then brown in oil on both sides.
- Place into the casserole dish on top of the onion slices.
- In a bowl whisk together the mustard, ketchup, cider vinegar, liquid smoke, brown sugar, chili powder, fresh garlic, cayenne (if using) and black pepper; mix well to combine, then season sauce with 1/4 teaspoon salt if desired.
- Pour over the browned chicken thighs.
- Using hands turn the chicken to coat well in the sauce.
- Bake at 350 degrees F for about 40 minutes or until the chicken is completely cooked through and tender.

- In a large bowl, mix mustard, brown sugar, allspice and pepper flakes. Remove 1/4 cup mixture for serving. Add chicken to remaining mixture; toss to coat., Grill chicken, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until a thermometer reads 170°. Serve with reserved mustard mixture.

- Preheat your oven to 400 degrees Line a large rimmed baking sheet with nonstick foil or parchment paper and spray with nonstick cooking spray.
- Pat chicken dry with paper towels and rub in the seasoning blend, then arrange chicken skin side up on the prepared baking sheet. Pour about ¾ of a cup of bbq sauce into a small bowl and brush the chicken lightly with the sauce on both sides, finishing with the chicken skin side up. Set the remaining bbq sauce aside to use later (do not leave the brush in the sauce).
